Warm foxtail millet bowl with mixed vegetables and South Indian tempering. Gluten-free lunch or light dinner; meal-prep friendly with optional lemon, coriander, and peanuts.
Drain soaked foxtail millet well. Heat half the ghee or oil in a heavy pan on medium heat.
Add millet and dry-roast 4-5 minutes, stirring, until fragrant and grains look dry.
Temper and cook the vegetables
Add remaining ghee or oil. When warm, add mustard seeds and let splutter. Add cumin seeds, curry leaves, and green chilli if using.
Sauté onion until soft and lightly golden. Add ginger-garlic paste, then tomato and turmeric. Cook until tomato breaks down.
Add mixed vegetables and salt; sauté 3-4 minutes.
Cook millet with vegetables
Stir roasted millet into the vegetables. Add 2 cups boiling water. Stir once, cover, and simmer on low 12-15 minutes until water is absorbed and millet is tender. Add hot water by the tablespoon if still underdone.
Pressure cooker option: after adding water, cook on medium until one whistle; rest 10 minutes off heat before opening.
Finish and serve
Rest covered 5 minutes off heat. Fluff with a fork. Fold in lemon juice, coriander, and peanuts if using. Serve warm.
