Crispy Air Fryer Potato Wedges (Indian-Spiced)

Thick potato wedges tossed in coriander, cumin, and Kashmiri chili, air fried until crisp outside and fluffy inside. Finished with lemon and optional chaat masala.

Ingredients
  

For the wedges

  • 900 g russet potatoes about 3 medium; scrubbed and dried
  • 1 tablespoon neutral oil about 1 to 1.5 teaspoons total if using spray; or a few seconds of oil spray
  • 1 tablespoon lemon juice
  • Salt to taste

Dry masala rub

  • 1.5 teaspoons Kashmiri red chili powder adjust for heat
  • 1.5 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder optional, for color
  • 1 teaspoon garlic powder or 3 teaspoons finely grated garlic
  • 1/2 teaspoon garam masala optional

Crisping coat

  • 1 tablespoon cornstarch cornflour

To finish

  • 1/2 teaspoon chaat masala check label for gluten if needed; or to taste
  • Lemon wedges
  • Fresh coriander leaves, chopped

Instructions
 

Prep the potatoes

  • Cut each potato in half lengthwise, then cut each half into 3 or 4 even wedges so the pieces cook in similar time. No need to peel unless you prefer it.
  • Soak in cold water 20 to 30 minutes if you want an extra-crisp edge, then drain and pat completely dry. If you are short on time, skip the soak and focus on very thorough drying.

Toss

  • In a large bowl, toss wedges with lemon juice, salt, and oil until lightly coated.
  • Stir cornstarch and all dry spices in a small bowl. Sprinkle over the wedges and toss until the surfaces look evenly dusty and no dry pockets of starch remain. Let sit 5 minutes while you preheat the air fryer.

Air fry

  • Preheat the air fryer to 200°C (390°F) if your model allows preheat.
  • Arrange wedges in a single layer with a little space between pieces. Air fry 18 to 24 minutes, flipping or shaking once halfway through, until the outsides are deeply golden and a knife slides into the center without resistance. Thicker wedges lean toward the longer range.
  • Work in a second batch if needed. Second batches often finish a minute faster because the machine is fully hot. Optional: for extra color on batch one, add 1 to 2 minutes at 210°C (410°F) at the end, watching closely so spices do not burn.

Finish

  • Transfer to a plate, sprinkle chaat masala if using, squeeze lemon, and scatter coriander. Serve hot.

Notes

Yukon Gold works too; wedges may be slightly creamier inside with a little less shatter on the crust.
If you need to skip cornstarch, use a touch more oil and expect a softer crust.
Oven swap: convection roast on a sheet pan at 220°C (425°F), single layer, 28 to 35 minutes, flipping once.
Store leftovers in an airtight container in the fridge up to 2 days. Reheat in the air fryer 4 to 6 minutes to bring the crunch back.
