Indian Masala Lentil Pasta (Dry Style, Lunchbox-Friendly)
Lentil penne tossed with sautéed vegetables, Maggi masala, dried herbs, and optional paneer cubes. A dry, high-protein Indo-Italian fusion perfect for no-mess school lunch boxes.
8ozlentil penneabout 225 g; red or green lentil pasta
1tablespoonolive oil or neutral oilplus extra for tossing

Cook the lentil pasta
Bring a large pot of salted water to a rolling boil.
Add lentil penne and cook 1 minute less than the package time for al dente. Lentil pasta can go mushy fast, so taste early.
Drain thoroughly. Do not rinse. Toss immediately with 1 tablespoon oil so strands stay separate.
Build the dry masala base
Heat 2 tablespoons oil in a wide skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds.
Add chopped onion. Sauté 3 to 4 minutes until soft and lightly golden.
Stir in ginger-garlic paste and cook 30 seconds until the raw smell fades.
Add diced vegetables. Sauté 4 to 5 minutes until tender but still with a little bite.
Reduce heat to low. Add Maggi masala, salt, dried oregano, dried basil, and chili flakes. Stir for 30 seconds until fragrant.
Toss and finish
Add the cooked lentil pasta to the pan. Toss on medium-low heat for 2 to 3 minutes until every piece is coated and the pan looks dry, not wet.
If using paneer, add small cubes in the last minute and toss gently so they warm through without breaking.
Taste and adjust salt or chili. Finish with cilantro if you like.
Cool on a plate 5 minutes before packing for the cleanest lunch box.
Notes
For kids, skip chili flakes and use half a tastemaker sachet if your child prefers milder flavor.Drain pasta well and avoid adding water to the masala for the driest lunchbox texture.Pan-fry paneer cubes in a teaspoon of oil until lightly golden, or add raw cubes for a softer bite.Refrigerate in an airtight container up to 3 days. Reheat in a skillet with a drop of oil, or pack straight from the fridge for lunch.
