  • 8 oz lentil penne about 225 g; red or green lentil pasta
  • 1 tablespoon olive oil or neutral oil plus extra for tossing

For the masala toss

  • 2 tablespoons oil olive, sunflower, or ghee
  • 1 teaspoon cumin seeds (jeera)
  • 1 medium onion finely chopped
  • 1 teaspoon ginger-garlic paste or 1/2 teaspoon each minced ginger and garlic
  • 1/2 cup mixed vegetables finely diced bell pepper, carrot, green peas, or corn
  • 1 Maggi noodle tastemaker sachet about 2 teaspoons; or 1 teaspoon Maggi masala magic
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red chili flakes up to 1/2 teaspoon; use 1/8 teaspoon or skip for young kids
  • 2 tablespoons fresh cilantro chopped; optional

  • 1/2 cup paneer cubes small, about 1/2-inch pieces; pan-fried or raw

Instructions
 

Cook the lentil pasta

  • Bring a large pot of salted water to a rolling boil.
  • Add lentil penne and cook 1 minute less than the package time for al dente. Lentil pasta can go mushy fast, so taste early.
  • Drain thoroughly. Do not rinse. Toss immediately with 1 tablespoon oil so strands stay separate.

Build the dry masala base

  • Heat 2 tablespoons oil in a wide skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds.
  • Add chopped onion. Sauté 3 to 4 minutes until soft and lightly golden.
  • Stir in ginger-garlic paste and cook 30 seconds until the raw smell fades.
  • Add diced vegetables. Sauté 4 to 5 minutes until tender but still with a little bite.
  • Reduce heat to low. Add Maggi masala, salt, dried oregano, dried basil, and chili flakes. Stir for 30 seconds until fragrant.
