Ingredients
  

Vegetables

  • 450 to 550 g small Indian eggplants baby brinjals; quartered from the base without cutting through the stem, or cubed medium globe eggplant
  • 2 cups tightly packed fresh methi leaves fenugreek; thick stems removed, washed and squeezed mostly dry

Tempering

  • 3 tbsp neutral oil groundnut or sunflower
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 10 to 12 fresh curry leaves
  • 1 pinch asafoetida hing; optional

Aromatics and spices

  • 1 medium onion about 150 g; finely chopped
  • 1 tbsp ginger-garlic paste or 1 tsp each minced ginger and garlic
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chili powder Kashmiri for color; or to taste
  • Salt, to taste
  • 1 tsp jaggery or sugar optional, if methi runs sharp

Optional finish

  • 2 tbsp roasted peanut powder or 1 tbsp sesame powder optional, for body
  • ½ tsp garam masala optional
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp lemon juice optional

Instructions
 

Prep

  • Wash methi, discard thick stems, squeeze excess water. Chop half roughly; keep the other half as smaller whole leaves if they are tiny.
  • Prep eggplant. If you worry about bitterness, toss with a pinch of salt, rest 10 minutes, then pat very dry.

Cook the sabzi

  • Heat oil in a wide kadai on medium-high until shimmering. Add mustard seeds; when they pop, add cumin, curry leaves, and hing.
  • Stir in onion with a pinch of salt; cook until edges turn gold, 6 to 8 minutes. Add ginger-garlic paste and cook until the raw smell fades.
  • Add turmeric, coriander, and red chili powder. Fold in eggplant; toss so every piece touches oil. Cover and cook on medium, stirring every few minutes, until eggplant yields to a spoon but still holds shape, 10 to 14 minutes depending on cut.
  • Add the first half of methi; cook uncovered until it wilts deeply into the oil, 3 to 4 minutes. Add remaining methi on gentler heat until bright and tender, 2 to 3 minutes more.
  • Taste for salt, heat, and bitterness. Stir in optional jaggery, peanut or sesame powder, and garam masala if using. Finish with cilantro and lemon if you want lift.

Notes

Two-stage methi keeps color and avoids a single brown smear; lowering heat for the second addition prevents steaming the eggplant mushy.
Vegan as written. For gluten-free, verify hing blends (some contain wheat flour) or omit hing.
Refrigerate leftovers up to 2 days in an airtight container; methi darkens slightly overnight. Refresh with lemon before serving.
Kasuri methi swap: crush 2 to 3 tbsp dried kasuri methi between your palms and add when eggplant is almost tender; skip the two-wave method.
