How to make ringan methi sabzi
Prep the eggplant

Methi in two waves
Chop half the methi roughly. Stir that half into the masala and cook uncovered until it wilts deeply into the oil, 3 to 4 minutes. Add the remaining methi on gentler heat and cook just until bright and tender, another 2 to 3 minutes. This is the step that keeps the sabzi from looking like a single green smear.
Finish
Taste for salt, heat, and bitterness. If methi reads sharp, add the tiny bit of jaggery. Optional peanut or sesame powder thickens the coat without cream. Finish with garam masala if you like, then cilantro and lemon if you want lift.
