  6. Taste the broth. If it tastes flat, simmer 5 more minutes uncovered to concentrate, then reassess before adding more salt.
  7. Stir in spinach and simmer 1 to 2 minutes until wilted. Off heat, stir in lemon juice and cilantro. Adjust salt and pepper. Serve hot with extra lemon on the side.
