Street Style Bhel Puri (Bombay Bhel)

Mix-to-order Mumbai bhel with murmura, sev, fresh vegetables, and classic chutneys. Vegan, naturally gluten-free if you choose GF sev, no cook once the potato is boiled.

Ingredients
  

For the base

  • 3 cups puffed rice murmura; crisp and fresh
  • 1 to 1½ cups thin sev divided
  • ½ cup roasted peanuts skinless
  • 1 medium potato boiled, peeled, and diced small
  • 1 small red onion finely chopped
  • 1 medium tomato deseeded and finely chopped
  • ¼ cup fresh coriander cilantro; chopped
  • 1 to 2 tbsp lemon juice plus wedges to serve
  • 1 to 2 tsp chaat masala or to taste
  • ¼ tsp black salt kala namak; optional
  • Salt to taste

Chutneys (add to taste at the end)

  • ¼ to ½ cup cilantro green chutney hari chutney
  • 2 to 4 tbsp date and tamarind chutney sweet chutney
  • 2 to 3 tbsp mint chutney optional

Optional add-ins

  • ¼ cup pomegranate arils
  • 2 tbsp roasted chana dal
  • 2 to 3 papdi crackers crushed

Instructions
 

Prep the vegetables

  • Boil the potato until fork-tender, cool, peel, and dice small. Room-temperature potato helps keep murmura crisp.
  • Finely chop onion and tomato. Deseed the tomato to reduce excess moisture.
  • Chop coriander and cut lemon wedges for serving.

Build the bhel (mix just before serving)

  • In a wide bowl, combine puffed rice, half the sev, peanuts, potato, onion, tomato, and coriander.
  • Sprinkle chaat masala, black salt if using, and salt. Toss gently until seasonings are evenly distributed.
  • Add lemon juice and toss again.
  • Add green chutney and sweet chutney a little at a time, tossing gently after each addition, until lightly coated but still crisp. Add mint chutney if using.
  • Top with remaining sev and serve immediately in bowls or paper cones.

Notes

Mix chutneys at the last minute: bhel turns soggy quickly once wet ingredients meet murmura.
For dry bhel, use less chutney and more lemon and chaat masala. For wetter Mumbai-style bhel, use more sweet chutney.
Check sev and chaat masala labels for wheat if you need strict gluten-free.
Leftovers do not store well once tossed; refrigerate components separately and refresh with new murmura next time.
Jain version: skip potato and onion; use cucumber or extra tomato and verify spice blends.
