That contrast is what I chase at home: crisp murmura, juicy tomato and onion, heat from green chutney, sweetness from imli chutney, and a shower of sev on top.

How to Make Street Style Bhel Puri

Prep the vegetables

  1. Boil the potato until fork-tender, cool slightly, peel, and dice small. Warm potatoes can steam the murmura, so I like them closer to room temperature.
  2. Chop onion and tomato fine. Deseeding the tomato keeps the mix from turning watery.
  3. Chop coriander and cut lemon wedges for serving.

Build the bhel (mix just before serving)

  1. In a wide mixing bowl, combine puffed rice, half the sev, peanuts, potato, onion, tomato, and coriander.
  2. Sprinkle chaat masala, black salt if using, and salt. Toss gently with clean hands or two large spoons. Taste a spoonful: you want salt and masala noticeable even before chutneys.
  3. Add lemon juice and toss again.
  4. Now add green chutney and sweet chutney a spoon at a time, tossing gently after each addition, until the grains lightly cling but still feel crisp. Stop before it looks soggy. If you are unsure, under-mix and serve extra chutney on the side.
  5. Top with remaining sev and serve immediately in bowls or paper cones.

Cart-style tip: Never toss chutneys in until guests are literally ready to eat. Bhel waits for no one.

Tips for the Best Texture

  • Buy fresh murmura and store it airtight. Stale puffed rice ruins bhel faster than any recipe mistake.
  • Pat tomatoes dry after deseeding if they feel juicy.
  • Layer sev: mix half in for flavour, sprinkle the rest on top for crunch people see first.
  • For dry bhel, use less chutney and more lemon and masala. For wet Mumbai bhel, add a touch more sweet chutney and a spoon of water only if your chutneys are very thick. I rarely need water.

What to Serve With Bhel Puri

On movie nights I often put out bhel next to a plate of mixed veg cutlet or vegetable pakora so there is something hot and something crisp-cold on the same table.
