Thandai mousse

This fusion thandai(spiced almond milk) recipe has all the traditional thandai flavors but looks so fresh with all the colors.

Ingredients
  

  • 1/4 cup Tapioca
  • Food colors
  • 3 cup Water divided
  • 1 cup Heavy cream
  • 1/2 cup Greek yogurt
  • 2 tbsp Thandai powder
  • 2-3 tbsp Honey (divided)

Equipment

  • 1 microwave optional

Method
 

For colored tapioca
  1. Divide Tapioca in 4 different bowls
    1/4 cup Tapioca
  2. Divide water into bowls and add food colors
    Food colors, 3 cup Water divided
  3. Soak for 3-4 hours
  4. After 3-4hrs remove water and microwave tapioca for 30 seconds
  5. Now add 1tbsp water and 1tsp honey to it to keep them seprated
For mousse
  1.  In a mixing bowl add whipping cream. Whip until stiff
    1 cup Heavy cream
  2. Add yogurt, honey and thandai powder. Combine everything.-
    1/2 cup Greek yogurt, 2 tbsp Thandai powder, 2-3 tbsp Honey (divided)
  3. In a serving glass, layer tapioca and thandai mousse. Enjoy chilled.
