Thandai mousse

This fusion thandai(spiced almond milk) recipe has all the traditional thandai flavors but looks so fresh with all the colors.

- 1/4 cup Tapioca
- Food colors
- 3 cup Water divided
- 1 cup Heavy cream
- 1/2 cup Greek yogurt
- 2 tbsp Thandai powder
- 2-3 tbsp Honey (divided)
For colored tapioca
Divide Tapioca in 4 different bowls
1/4 cup Tapioca
Divide water into bowls and add food colors
Food colors, 3 cup Water divided
Soak for 3-4 hours
After 3-4hrs remove water and microwave tapioca for 30 seconds
Now add 1tbsp water and 1tsp honey to it to keep them seprated
For mousse
In a mixing bowl add whipping cream. Whip until stiff
1 cup Heavy cream
Add yogurt, honey and thandai powder. Combine everything.-
1/2 cup Greek yogurt, 2 tbsp Thandai powder, 2-3 tbsp Honey (divided)
In a serving glass, layer tapioca and thandai mousse. Enjoy chilled.
