For the tikki
- Potatoes, boiled, peeled, and cooled — about 4 medium (roughly 500 g before boiling)
- Poha (flattened rice), dry — 2 tbsp, lightly crushed (or 2 tbsp rice flour as swap)
- Cornstarch or arrowroot — 1 tbsp (helps bind and crisp)
- Ginger paste — 1 tsp
- Green chilies, finely chopped — 1 to 2 (to taste)
- Fresh cilantro, chopped — 3 tbsp
- Roasted cumin powder — 1 tsp
- Chaat masala — 1 tsp
- Red chili powder — 1/2 to 1 tsp
- Amchur (dry mango powder) — 1/2 tsp (or a squeeze of lemon later)
- Salt — to taste
- Neutral oil spray — for the basket and patties
Optional for serving
- Green chutney, tamarind chutney, thin sev, chopped onion, yogurt (for a quick chaat plate)


How to make air fryer aloo tikki
- Mash the potatoes in a wide bowl until mostly smooth; a few small lumps are fine and keep the texture pleasant.
- Toast the crushed poha in a dry pan for 30 to 60 seconds until aromatic, then cool slightly. Skip toasting if you are short on time; toasting helps it disappear into the mix.
- Add everything except oil — spices, ginger, chilies, cilantro, poha or rice flour, cornstarch, and salt. Mix gently with a fork or hands until evenly combined. If the mix feels sticky wet, add another teaspoon of rice flour or cornstarch. If it feels dry and crumbly, add a teaspoon of water at a time until it holds when squeezed.
- Taste-test by pan-frying a tiny pinch in a teaspoon of oil, or microwave a pea-sized ball for 10 seconds — adjust salt, chili, and amchur.
- Shape into patties about 2/3 inch thick and roughly 2.5 inches wide. Press gently so there are no cracks on the edges; cracks are where air fryer tikkis like to split.
- Chill on a plate for 15 to 30 minutes in the fridge (or 10 minutes in the freezer) so they firm up.
- Preheat the air fryer to 190 °C (375 °F) for 3 minutes. Lightly spray the basket.
- Arrange tikkis in a single layer with a little space between each. Spray the tops lightly.
- Air fry for 12 to 14 minutes, flip carefully with a thin spatula, spray again, then cook 8 to 10 minutes more until deeply golden with crisp edges. Timings vary by machine; if yours runs hot, check early.
- Serve hot with chutneys, or build a quick plate with yogurt, chutneys, onion, and sev. On busy evenings I pair them with cucumber raita for something cooling, or pack them beside methi thepla when we want a Gujarati-style tea spread.
Tip from my kitchen: If a tikki sticks, let it cook another minute before flipping. The crust releases more easily when it is actually set.

- Preheat the air fryer to 190 °C (375 °F) for about 3 minutes. Lightly spray the basket.
- Arrange tikkis in a single layer with space between; spray tops. Air fry 12–14 minutes.
- Flip carefully with a thin spatula; spray again. Cook 8–10 minutes more until deeply golden and crisp. Timings vary by model.
- Serve hot with chutneys, yogurt, onion, and sev for chaat if you like.
Notes
Do not crowd the basket or the patties steam instead of crisping.
If a patty sticks, wait another minute before flipping so the crust can release.
Store cooled tikkis in an airtight container in the fridge up to 3 days; reheat in the air fryer 3–5 minutes to recrisp.
Stovetop option: shallow-fry in a nonstick pan with 2–3 tbsp oil until golden on both sides.

FAQs
Why do my air fryer tikkis break?
Warm potatoes, too much moisture, or flipping too early are the usual causes. Cool the mash completely, use a binder, chill shaped tikkis, and let the first side set before you flip.
Can I make these vegan?
Yes. This recipe is naturally vegan if you serve without yogurt. For chaat, use plain dairy-free yogurt.
Can I freeze aloo tikki before air frying?
Yes. Freeze shaped patties in a single layer, then store in a bag. Air fry from frozen with a few extra minutes, or thaw in the fridge overnight for more even timing.
What can I use instead of poha?
