2. Whisk the sesame-lime dressing
In a small jar, shake olive oil, lime juice, toasted sesame oil, ground cumin, salt, and black pepper. Taste. You want bright lime first, sesame in the background, cumin as a warm finish. Add a pinch of chaat masala if you like a chaat edge without making this a full chaat bowl like kala chana chaat salad.
3. Build the salad
In a wide bowl, combine cooled brown rice, chickpeas, diced cucumber, diced bell pepper, chopped tomato, and coriander. Pour over most of the dressing and toss gently. Taste for salt and lime. Finish with toasted sesame seeds and the last spoon of dressing.

Instructions

Is this salad Jain? Yes, as written. No onion, garlic, or root vegetables. Use plain chickpeas and check that your chaat masala has no onion or garlic powder if you add it.
Can I make this vegan? It already is. No dairy, no honey, no ghee.
Can I use quinoa or millet instead of brown rice? Yes. Quinoa makes a lighter bowl and will sit closer to the quinoa chana protein salad in this campaign. Millet works too if you already batch-cook it. Keep the same dressing and vegetables.
