Ingredients
For the laddoo
- 1 cup raw almonds
- 1/2 cup finely shredded carrots (gajar)
- 1/2 cup pitted dates
- 1/2 teaspoon ground cinnamon (dalchini)
- 1/2 teaspoon ground nutmeg (jaiphal)
- 1 tablespoon coconut oil or ghee
- 2 tablespoons unsweetened shredded coconut
Instructions
Make the laddoo
- Process almonds and dates until a coarse paste forms.
- Add shredded carrot, cinnamon, nutmeg, coconut oil, and shredded coconut. Pulse until combined.
- Roll into 1-inch laddoo. The mix will feel softer than nut-only laddoo — that is normal.
- Chill at least 1 hour until firm.
