4. Add sugar and cardamom. Stir in ¾ cup sugar (start here; add up to ¼ cup more if your carrots are tart) and ½ teaspoon ground cardamom or seeds crushed from 6 pods. Cook 5 to 8 minutes more. The halwa should look glossy and start pulling away from the pan sides in one mass.
