What is dudhi halwa?

Dudhi and lauki are regional names for bottle gourd, a mild, water-rich vegetable common in Indian home cooking. Lauki ka halwa turns that neutral base into a dessert by cooking away moisture in ghee, then reducing milk until the strands look glossy and translucent.

In many Gujarati homes, this halwa shows up for Navratri, Ekadashi, or a simple Sunday lunch thali. It is lighter than carrot halwa on the palate but still rich from milk and nuts. The version here stays on the stovetop in one pan, which is how my family makes it when the festival guest list is long.

Choosing and prepping dudhi (avoid bitter halwa)

Grate, squeeze, taste-test: Peel, grate on the large holes of a box grater, and squeeze out excess water with your palms. Taste a pinch of raw grated gourd. If it tastes sharp or soapy, discard that batch and start with a new piece. I do this every time, even when the vegetable looks fine from the outside.

Keep the grate coarse: Fine shreds can mush into a paste. You want visible strands that stay separate in the pan.

Tips for perfect lauki halwa every time

Ghee first, patience second: Heat ghee until shimmering, add grated dudhi, and cook on medium, stirring often, until the raw smell fades and the color dulls from bright green to softer olive tones. That step usually takes 8 to 12 minutes in my pan.

Warm milk helps: Heat milk separately until steaming, then pour in. Cold milk added to hot gourd can split. If it curdles slightly, keep stirring on low; it often comes back together as it reduces.

Sugar after reduction: Add sugar once the milk has mostly cooked down and the halwa looks thick. Early sugar can slow reduction and make the texture gluey.

Texture cue: The halwa is ready when it pulls away from the pan sides, ghee shines at the edges, and a spoon dragged through leaves a trail that fills slowly.

Swaps: Replace up to half the sugar with grated jaggery for a deeper caramel note. Skip nuts for nut-free guests, or use seeds you trust for fasting rules.

Mistake I made once: I skipped the raw taste-test on an older lauki. The halwa smelled fine while cooking but tasted bitter at the table. Now I taste before the ghee, not after the milk.

Ingredients
  

For the halwa

  • 2 cups grated dudhi lauki / bottle gourd; 300 to 350 g peeled weight; lightly squeezed, from about 1 medium gourd
  • 3 tablespoons ghee plus extra for garnish if desired
  • 2 cups full-fat milk warmed
  • 1/2 cup granulated sugar adjust to taste
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons slivered almonds and pistachios for garnish
  • 1 pinch edible silver leaf vark; optional

Instructions
 

Prep the dudhi

  • Peel the bottle gourd, taste a small piece for bitterness, then grate on the large holes of a box grater.
  • Squeeze out excess water with your palms. Taste a pinch of the grated gourd; if bitter, discard and use a fresh lauki.

Cook the base

  • Heat ghee in a heavy pan on medium. Add grated dudhi and sauté, stirring often, until the raw smell fades and the color softens, 8 to 12 minutes.
  • Pour in warm milk. Cook on medium-low, stirring every few minutes, until the milk reduces and the halwa thickens, 20 to 25 minutes.

Finish and garnish

  • Stir in sugar and cardamom. Cook until the halwa pulls away from the pan sides and ghee shines at the edges, 5 to 8 minutes.
  • Garnish with nuts and silver leaf if using. Serve warm or at room temperature.

Notes

  • Warm the milk before adding to reduce curdling. If the milk splits, keep stirring on low heat; it often smooths as it reduces.
  • Replace up to half the sugar with grated jaggery for a deeper flavor; add jaggery after the milk has mostly reduced.
  • Store refrigerated up to 4 days in an airtight container. Reheat with a splash of milk.
  • For fasting-friendly versions, confirm garnish and sweetener choices with your family vrat rules.
  • Khoya is optional: stir in 2 to 3 tablespoons at the end for extra richness.

FAQs

Why is my lauki halwa bitter?

Usually the bottle gourd was old or not taste-tested before cooking. Bitterness rarely fixes itself with more sugar. Start with a fresh young lauki and taste the raw grate.

Can I use khoya or mawa?

You can stir in 2 to 3 tablespoons of khoya at the end for extra richness, but it is optional. This recipe is designed to thicken from milk reduction alone.

How long does dudhi halwa keep?
