  • 100 g (about 2 packed cups) kataifi pastry, thawed if frozen
  • 1 tbsp unsalted butter
  • 270 g (¾ cup + 3 tbsp) good-quality pistachio cream

  • 220 g (1½ cups + 3 tbsp) milk chocolate, chopped

A note on ingredients: Pistachio cream (a sweet, smooth spread) is what you want here, not pistachio butter (which is just ground nuts and oil). The cream gives that signature smooth, sweet pistachio flavour. Kataifi is the shredded filo-like pastry that gives the dessert its crunch – look for it frozen at Mediterranean, Greek, or Middle Eastern grocers.

Why applesauce works as an egg replacer for brownies: Eggs do two jobs in a fudgy brownie – they bind and they add moisture that turns to steam in the oven, lifting the crumb gently without making it cakey. Unsweetened applesauce mimics that moisture-and-steam role almost perfectly. It does not add the same richness eggs do, which is why we lean a touch heavier on chocolate and butter to compensate.

How to Make Eggless Dubai Pistachio Brownies (Step-by-Step)

Step 1 – Bake the Eggless Fudgy Brownie

  1. Preheat the oven to 180°C (350°F) for at least 10 minutes. Line a square 8 x 8 inch metal pan with parchment paper, leaving overhang on two sides for easy lifting later. Lightly grease the parchment with a little butter or oil spray.
  2. Combine the chocolate chips and butter in a microwave-safe bowl. Melt in 30-second bursts, stirring between each, until fully smooth. Set aside to cool slightly. (You can also use a double boiler if you prefer.)
  3. In a large mixing bowl, whisk the applesauce and sugar together until the sugar dissolves and the mixture is smooth. Add the water and vanilla and whisk just to combine.
  4. Pour in the melted chocolate and stir until evenly incorporated. Do not over-whisk here – you do not want to beat air into the batter, or the brownies will turn cakey.
  5. Sift the flour, baking powder, baking soda, and salt directly over the wet mixture. Fold gently with a spatula until no dry streaks remain. The batter will be thick.
  6. Scrape the batter into the prepared pan. Smooth the top with a spatula and tap the pan firmly on the counter two or three times to release air bubbles.
  7. Bake for 28-32 minutes. A toothpick inserted in the centre should come out with a few moist crumbs (not raw batter, not totally clean). My OTG nails it at 30 minutes.
  8. Cool the brownies completely in the pan on a wire rack. As they cool, they will deflate slightly – that is perfect.

Step 2 – Toast the Kataifi and Mix the Pistachio Filling

  1. While the brownies cool, gently pull the kataifi strands apart with your fingers so they are loose and not clumped together.
  2. Melt the 1 tbsp butter in a wide non-stick pan over medium heat. Add the kataifi and cook, stirring frequently, until every strand turns a deep golden colour and feels dry and crisp – about 10-12 minutes. Patience is everything here. Pale kataifi will go soggy under the chocolate.
  3. Tip the toasted kataifi onto a plate and let it cool for 5 minutes.
  4. Gently warm the 270 g pistachio cream in the microwave for 15-20 seconds until it loosens and pours easily. Pour over the cooled kataifi in a bowl and fold together until every strand is coated.

Step 3 – Spread the Pistachio Layer and Pour the Chocolate

  1. Spoon the pistachio kataifi mixture over the cooled brownie base in the pan. Spread it into an even layer right to the corners using an offset spatula or the back of a spoon.
  2. Press a piece of parchment paper on top and gently press the layer down with your palms so it compacts and adheres to the brownie.
  3. Melt the 220 g milk chocolate in a clean bowl in 30-second bursts until smooth. Pour over the kataifi layer and tilt the pan gently from side to side so the chocolate flows into a smooth even sheet. Tap the pan once on the counter.

Step 4 – Feather the Topping, Set, and Slice

  1. Melt the 20 g white chocolate and the 20 g pistachio cream separately in small bowls. Spoon each into a small piping bag (or use a sturdy zip-top bag and snip the corner).
  2. Pipe thin diagonal lines of white chocolate across the milk chocolate top. Pipe thinner diagonal lines of pistachio cream alongside.
  3. Drag a toothpick or skewer perpendicular to the lines – first one direction, then the other – to create the feathered marbled pattern.
  4. Refrigerate the tray for at least 1 hour so the chocolate sets fully and the layers firm up.
  5. Lift the brownie out of the pan using the parchment overhang. Warm a sharp knife in hot water, dry it well, and slice into 16 squares. Wipe and rewarm the knife between cuts so the chocolate top does not crack.

Feather, chill, and slice

  • Melt white chocolate and 20 g pistachio cream separately. Pipe thin diagonal lines of each across the milk chocolate. Drag a toothpick perpendicular to the lines both ways to feather.
  • Refrigerate at least 1 hour until set. Lift out using parchment; slice into 16 squares with a hot dry knife, wiping between cuts.

Notes

Use pistachio cream (sweet spread), not plain pistachio butter. Choose a cream with at least 25% pistachio so the middle does not weep oil.
Kataifi is essential; vermicelli or sev will not give the same shatter. Find it frozen at Middle Eastern or Greek grocers.
If the brownie turns cakey, you likely overmixed after adding flour or overbaked. Fold gently and pull when the toothpick still has moist crumbs.
Chill before slicing so the chocolate top does not crack. Brownies keep 3 days at room temperature in a cool spot, up to 1 week refrigerated, or freeze wrapped squares up to 3 months.

Tips for the Best Eggless Dubai Brownies

  • Confession: my first batch was cakey because I whisked the applesauce-sugar-chocolate mixture too vigorously. The second batch I whisked just to smooth and folded the flour gently – that was the keeper. Treat applesauce like you would treat eggs: gentle hand.
