The first time I put a whole cauliflower on the dinner table, someone asked where the florets were. I had a knife next to the platter and a pale gold gravy pooled around the stem. We sliced it like a roast. That is the point.
Gobi musallam, also written gobhi musallam, is a Mughlai whole roasted cauliflower in a yogurt-cashew gravy. Musallam means whole. You do not chop it into aloo gobi. You do not serve it dry like tikka. You bring the head out, spoon the gravy through the florets, and cut wedges at the table.

What is gobi musallam?
Gobi musallam is the vegetarian cousin of murg musallam: a whole piece, slow-cooked, finished in a rich North Indian gravy. Gobi (cauliflower) stays intact. The sauce is Mughlai in the yogurt-cashew-whole-spice sense, closer to paneer korma than to a tomato makhani.
Restaurant menus often send out a red version: onion, tomato, Kashmiri chili, cream. That plate is closer to gobi makhani with a whole head in the pot. Fine. Different dish. This recipe keeps tomatoes out so the gravy stays pale and the cauliflower is the color on the platter.
It sits next to paneer musallam in the same family. Whole piece. Cashew gravy. Knife on the table.
Gobi musallam vs tikka vs aloo gobi vs restaurant red

Test note: The first batch, I skipped the blanch because I thought the oven would finish the core. The edges browned. The stem stayed woody. Next time I boiled it 7 minutes, flipped it once, and pulled it when a fork met a little resistance at the stem. That head roasted through without collapsing.
Ingredient notes
Cauliflower. One small-medium head, about 1.5 to 2 pounds (700 to 850 g) after you trim the leaves and the thick stem. A giant Costco head will not fit in a home stockpot, and the core stays raw while the florets go soft. Buy two medium heads before you buy one huge one.
Thick yogurt. Whole-milk yogurt, not the watery kind. Greek yogurt works. If it is very thick, loosen the marinade with 1 tablespoon milk so you can push it into the florets. Low-fat yogurt slides off in the oven.
White or yellow onion. Sweeter, paler gravy. Red onion works. The gravy will pick up a little color.
Cashews. Six to eight raw ones, boiled with the onion, then blended. That is the body. Do not skip them and dump in extra cream. Cream finishes. Cashew builds.
Whole spices. Cinnamon, black cardamom, cumin. This gravy is not a spice-powder pile. Kasuri methi at the end is what makes it smell like a North Indian kitchen.
No tomato. No coconut milk. Tomato turns this restaurant-red. Coconut milk is a vegan makhani habit, not this musallam.

How to sauce the underside, not only the crown
Trim the stem so the head sits flat. That underside is where people forget the marinade. Use your fingers. Push yogurt into the gaps, then flip and do the stem side.
Blanch first. Six to eight minutes in salted water, head down, then flip. A fork should meet a little resistance at the stem. Ten minutes is how it turns to mash in the oven. Drain and pat it dry or the marinade will not stick.
Roast at 400°F (200°C) until the edges take color and a knife slides through the stem, 28 to 35 minutes depending on size. Air fryer: 375°F (190°C), 18 to 22 minutes, check at 15.
The gravy is a boiled-and-blended paste: onion, ginger, chili, cashews, then yogurt. Tadka the whole spices, cook the paste a couple of minutes, finish with cream. Set the roasted head in the pot or on a platter. Spoon gravy through the florets and over the underside. Cover 2 minutes so it drinks. Longer than that and you are stewing it.

Gobi Musallam (Whole Roasted Cauliflower in Mughlai Gravy)

Ingredients
For the cauliflower
- 1 small-medium whole cauliflower 1.5 to 2 lb / 700 to 850 g after trim
- 1 tablespoon salt for the blanching water
- water to cover
For the marinade
- 1/2 cup thick whole-milk yogurt or Greek yogurt
- 1 1/2 tablespoons ginger-garlic paste
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garam masala
For the white gravy
- 1 large white or yellow onion about 12 oz / 350 g, sliced
- 1 inch ginger roughly chopped
- 1-2 green chilies sliced
- 8 raw cashews
- 2 cups water
- 1/4 cup plain whole-milk yogurt
- 1 tablespoon oil or ghee
- 1 inch cinnamon stick
- 1 black cardamom pod
- 3/4 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 2 teaspoons kasuri methi
- 1/2 teaspoon salt or to taste
- 1/4 cup heavy cream
To finish
- pomegranate arils
- fresh cilantro
- kasuri methi extra, crushed
Instructions
Blanch the cauliflower
- Pull off the leaves. Cut the thick stem so the head sits flat. Keep the core intact.
- Bring a pot of water to a boil, deep enough to hold the head. Add 1 tablespoon salt.
- Lower the cauliflower in, head down. Cook 3 to 4 minutes, flip, and cook 3 to 4 minutes more. A fork should meet a little resistance at the stem. Do not boil it soft.
- Lift it out with tongs. Drain well. Pat dry, including the underside.
Marinate and roast
- Heat the oven to 400°F (200°C), or the air fryer to 375°F (190°C). Line a sheet with parchment if you are using the oven.
- Whisk the yogurt, ginger-garlic paste, salt, pepper, and garam masala.
- Coat the cauliflower on the crown and the underside. Push the marinade into the florets with your fingers.
- Oven: roast 28 to 35 minutes, until the edges take color and a knife slides through the stem. Air fryer: 18 to 22 minutes, check at 15. Size changes the time.
Make the gravy while it roasts
- Put the onion, ginger, green chilies, cashews, and 2 cups water in a pot. Cover and boil 15 minutes, until the onion is soft.
- Cool a minute. Blend with 1/4 cup yogurt until completely smooth.
- In the same pot, heat the oil or ghee. Add cinnamon, black cardamom, and cumin. Let them sizzle.
- Pour in the onion paste. Cook 2 to 3 minutes. Add coriander powder, garam masala, kasuri methi, and salt. Cook 1 minute.
- Stir in the cream. The gravy should be spoonable, not soup. Add a splash of water if it is paste-thick. Taste for salt.
Assemble
- Set the roasted cauliflower in the pot, or on a warm platter with gravy underneath.
- Spoon gravy through the florets and over the underside. Cover 2 minutes on low so it drinks. Do not simmer it for 15 minutes or the head will slump.
- Move it to the serving platter. Pour more gravy around it, and a little on top. Finish with pomegranate, cilantro, and kasuri methi. Put a knife on the table.
Notes

Tips from testing
If the core is raw and the edges are brown, you skipped the blanch or the head was too big. Next time, buy a medium cauliflower and give it the full 6 to 8 minutes in salted water.
If the head collapses when you lift it, you blanched it like pasta. Pull it earlier. There is no rescue once it is soft, except calling it a tender curry and serving it in pieces.
If the underside is pale and dry, you only sauced the crown. Flip the head in your hands when you marinate, and again when you spoon the gravy.
If the gravy looks thin and tastes raw, the onion paste needed those 2 extra minutes on the tadka. If it looks pasty, loosen with water, not more cream.
What to serve with gobi musallam
Naan, tandoori roti, or soft homemade roti first. You want something to swipe through the gravy after you cut a wedge. Instant pot jeera rice if the table wants a spoon.
A cold cucumber raita next to it. The gravy is mild, but the whole spices still want something cool.
Keep aloo gobi for the floret night. Keep paneer musallam if you want the same whole-piece idea with paneer.

This gobi musallam is the platter I make when I want cauliflower to look like a roast and eat like a Mughlai curry.
