How to Make High-Protein Creamy Peri-Peri Pasta
Sauté the vegetables. Heat the olive oil in a large pan over medium heat. Add the sliced onion, bell peppers, finely chopped red chilli, and minced garlic along with the peri peri seasoning and cumin. Season with salt and pepper, then cook for about 5 minutes, stirring occasionally, until the vegetables soften but still hold a little bite.
Build the sauce. Lower the heat. Push the vegetables to the edges and make a well in the centre of the pan. Add the light cream cheese and 1 to 2 tablespoons of reserved pasta water. Stir until you have a smooth, glossy sauce. Add another splash of pasta water if it looks too thick. It should coat the back of a spoon, not sit in a stiff clump.
Cook the pasta. Meanwhile, cook the penne in well-salted boiling water until al dente. Reserve about 1/2 cup of pasta water before draining.
Toss and finish. Add the drained pasta to the sauce and toss until every piece is evenly coated. Drizzle over the peri peri marinade, scatter fresh parsley, and serve immediately while the sauce is still silky.
