Weeknight chhole bhature cravings do not always match weekend energy. On busy school nights, I still want soft chickpeas, a dark, clingy masala, and the kind of aroma that pulls everyone to the table before I even set out the plates. That is the story behind this Instant Pot chhole (chole): a Punjabi-style chole I make in one pot when I do not have hours to mind the stovetop.

If you already love our Instant Pot Rajma for a cozy bean night, you will like this one too. The Instant Pot is not trying to be a dhaba tandoor. It is trying to be honest, reliable, and deeply home-cooked, with room to simmer at the end until the gravy looks and tastes finished.

Soak the chickpeas, brown the onion-tomato masala, and let the pressure do the long work. Then come in with kasuri methi, garam masala, and a last simmer until the oil meets the edge of the pan in the way you recognize from good chole. If you are ready for a chhole and rice (or a weekend bhature), let us make it together.

Chhole and Chole, at Our Table

Across North India, you will hear the same chickpea curry called chhole or chole, sometimes chana masala in restaurants. The spellings differ. The comfort does not. At home, we use whatever we grew up saying, and we focus on the taste: warm spices, tangy tomatoes, and chickpeas that are tender but not mushy.

Chickpeas are a staple in our vegetarian weeknight rotation, especially when I want a protein-forward meal that also plays well with meal prep. If you are building iron-friendly plates, pair this kind of legume dinner with a vitamin C-friendly side (lemon wedge, tomato salad, or cooling Cucumber Raita). For another iron-rich bowl from the site, try Palak dal on a lighter night.

Why You Will Love This Instant Pot Chhole

Editorial magazine style chole and jeera rice with linen and brass on wood
  • It is a true one-pot weeknight plan after soaking: sauté, pressure cook, then simmer to finish.
  • The masala is restaurant-style, but the method stays practical for home cooks.
  • It is naturally vegetarian, easy to make vegan, and simple to keep gluten free if you choose certified spices and check your chole masala blend.
  • The leftovers are sometimes even better the next day, so lunchbox rotation feels effortless.

Stovetop truth, learned the hard way: if your chana is old, it will not soften on pride alone. A second pressure cook with a little extra water fixes it faster than hope and extra simmer time.

Finishing

  • 1 1/2 to 2 tsp kasuri methi crushed between palms
  • 1 tbsp fresh coriander chopped, optional
  • 1/2 to 1 tsp ghee on top skip for vegan; optional

Instructions

Soak the chana (recommended)

  • Rinse dried chickpeas well. Soak in plenty of water for 8 to 10 hours. Drain, rinse, and set aside.

Sauté the aromatics

  • Set the Instant Pot to Sauté (Normal or Medium). Add oil or ghee. If using cumin seeds, sizzle 10 to 12 seconds. Add bay leaf and cardamom, if using.
  • Add onion and a pinch of salt. Cook 7 to 10 minutes, stirring often, until deep pink-golden. Add ginger-garlic paste; cook 1 minute until the raw edge fades.

Build the tomato layer

  • Add tomato puree. Cook 5 to 8 minutes until the masala thickens and oil flecks the edges. Add a splash of water if it sticks. Scrape the bottom often on stainless steel.

Add spice powders and chole masala

  • Add turmeric, red chili, coriander, cumin, and most of the chole masala (reserve a pinch). Add half the garam masala now if you like. Cook 20 to 30 seconds, then add 2 to 3 tbsp water, stir, and let it absorb.

Pressure cook

  • Add soaked drained chickpeas, water, optional tea bag (tucked where you can find it), and salt. Scrape the bottom. Seal and pressure cook on High 32 to 38 minutes (start at 35; older beans need more).
  • Natural release 12 to 18 minutes, then quick release any remaining pressure.

Simmer, mash a little, finish

  • If the gravy is thin, use Sauté. Lightly mash about 1/4 cup chana against the pot side. Simmer 5 to 8 minutes until creamy.
  • Add kasuri methi, remaining chole masala to taste, remaining garam masala, and amchoor, anardana, or lemon until balanced. Remove tea bag if used.
  • Simmer 2 to 3 minutes until glossy on top. Garnish with coriander and optional ghee and a pinch of chole masala if needed.

Notes

No-soak option: pressure cook unsoaked chana about 50 to 55 minutes on High with a longer natural release; add extra water as needed. Texture will be slightly more toothsome than soaked.
Canned shortcut: use two 15-ounce cans, drained and rinsed; add after masala is cooked; simmer on Sauté 10 to 15 minutes, mash a little, then finish.
Jain: skip onion and garlic; use more tomato, ginger, and hing if you use it; longer masala cook for depth.
Old beans: if chana stays firm, pressure cook again 8 to 10 minutes with about 1/2 cup hot water.
Storage: refrigerate up to 4 days or freeze up to 2 months; reheat with a splash of water and adjust salt.

FAQs

Q1. Can I make this Instant Pot chhole vegan?
Yes. Cook with oil, skip the finishing ghee, and if you add cream, use cashew or oat cream. Many families prefer it without cream anyway.

Q2. I did not plan ahead, can I skip the soak?
You can, but the pressure cook time and natural release are longer, and the texture is not quite as even as a soaked chana. For same-day, try a 1- to 2-hour hot water soak, or the canned short route.

Q3. The gravy is thin, what should I do?
Simmer on Sauté, mash 2 to 3 tablespoons of chickpeas, and let it reduce 5 to 8 minutes, stirring. If you still need body, a teaspoon of good besan bloomed in 1 to 2 tablespoons of hot oil, stirred into a smooth paste, can thicken. Use sparingly so the flavor does not go flour-forward.

Q4. How can I make this chole less spicy for kids?
Reduce kashmiri or red chili powder, skip or halve the green chilies, and add yogurt on the side, or a mild raita like this Cucumber Raita for a cooling pair.

Q5. Do I really need a tea bag?
No. It is optional. Some cooks like the deeper color. I often skip it and rely on a longer onion cook and a patient simmer instead. Skip entirely if you prefer no caffeine from tea.

Q6. Is chhole the same as palak chhole?
Not in this post. Palak chhole is a spinach-forward variation. If you want a spinach and iron angle at home, the spirit is close to the comfort of Palak dal on our site, a different but equally homey bowl.

Closing

I hope this Instant Pot chhole makes your chhole and rice, or that big weekend bhature dream, a little more reachable on real-life calendars, not just festival calendars. The best chole, for me, is the one I will actually make again, with honest timing notes and a gravy that clings.

If you make it, I would love to know what you serve it with first: plain rice, jeera rice, or a proper bhature stack?
