How to Make Kulfi Overnight Oats

  2. Whisk the base. In a bowl or jar, combine the remaining evaporated milk and an equal amount of your milk of choice. Whisk in the bloomed saffron milk, cardamom, salt, and sweetener until fully combined. Taste and adjust; it should be a touch sweeter than you want, since chilling mutes it.
  3. Add oats and chia. Stir in the rolled oats and chia seeds until everything is coated. Let it sit 5 minutes, then stir again so the chia does not clump at the bottom.

Tips for the Perfect Overnight Oats Texture

  • Mind the ratio. About a 1:1 measure of oats to liquid, plus the chia, gives a thick, scoopable jar. More liquid makes it looser and more porridge-like, which is lovely warm.
  • Do the second stir. After the oats and chia rest 5 minutes, stir again. This is what keeps the chia from welding into a lump at the bottom overnight.

Do I need chia seeds, or can I skip them?

You can skip them, but the oats will be looser and more porridge-like. Even 1 tablespoon per serving helps the jar set thick and spoonable. If you leave chia out, use a little less milk.

Why did my overnight oats turn out too thick or too runny?

Too thick usually means the oats and chia drank up all the liquid overnight, so stir in a splash of milk before eating. Too runny means not enough oats or chia for the milk. Stick close to the 1:1 oats-to-liquid ratio plus chia and give it a full overnight set.

Can I make it ahead for the whole week?
