We had vrat-friendly paneer tikka on the tray two Fridays in a row. I still wanted a skewer that felt like restaurant malai tikka, just not paneer again, and not another red tandoori plate. There was a bag of baby potatoes on the counter and a small pot of leftover cream. That was the night I started testing this.
Malai aloo tikka (also searched as aloo malai tikka) is that swap. Parboiled baby potatoes in a hung-curd, cream, and cashew marinade, then baked, air fried, or cooked on a tawa (flat griddle) until the edges brown. The marinade stays ivory. Cardamom and kasuri methi (dried fenugreek leaves) do the flavor work, not Kashmiri chili.

What is malai aloo tikka?
Malai means fresh cream. Tikka means grilled pieces. Malai aloo tikka is a North Indian restaurant appetizer: potatoes in a thick white marinade, cooked until the outside catches color. Hotel menus list it next to paneer malai tikka. Same family. Different protein.

This recipe stays white on purpose. No chili powder in the hero marinade. No tomato. No gravy.
Malai aloo tikka vs tandoori aloo tikka vs malai curry vs tikki
- Tandoori aloo tikka: red yogurt marinade, chili and chaat masala, smoky heat. The usual “aloo tikka” people mean.
- Baby potato malai curry: same potatoes, wet gravy. You need a bowl, not a skewer.
- Aloo tikki: mashed, shaped, fried. A snack from a different street.
- Malai aloo tikka: dry white marinade. Cream and cashew. Mild. You eat it off a stick with mint chutney.
Use tandoori aloo tikka when you want heat. Use this when paneer tikka is on repeat and you still want something creamy.

Test note: I pulled the first pot at a full boil, about 15 minutes for these baby potatoes. The centers were soft, the halves tore when I threaded them, and the marinade pooled. Next time I stopped at 10 minutes. A knife met a little resistance. Those stayed whole, and the coating browned instead of dripping.

Ingredient notes
Baby potatoes. About 1 pound (500 to 550 g). Look for ones around 1.5 inches. Halve the larger ones so they cook evenly. No baby potatoes: cut regular Yukon Gold or russet into 1.5-inch cubes. Waxy potatoes hold better than floury ones.
Hung curd. Regular yogurt drained 3 to 4 hours until it looks like soft cream cheese. Greek yogurt is the US stand-in. Runny dahi will not cling. It burns into puddles.
Malai / cream. Three to four tablespoons. Skip it and you have a yogurt tikka, not this one.
Cashew paste. Twelve raw cashews blended with ginger, garlic, and a splash of water until silky. Cream cheese plus almond flour is a US shortcut, not the hero method.
White spices. Cardamom, white pepper, a pinch of garam masala, ajwain (carom seeds), and kasuri methi. White pepper keeps the heat without staining the marinade. Kashmiri chili belongs on the tandoori tray.
Onion and capsicum. Optional, for the party-skewer look. Skip both for Jain.
How to keep the marinade ivory and thick
Blend the cashews until there is no grit. Stir them into thick yogurt and cream. The mix should coat a spoon and stay there. If it runs, add one more tablespoon of cashew paste, or 1 teaspoon cornstarch. Do not reach for besan. That is the tandoori school, and it changes the taste.
Cool the potatoes completely before you add them. Warm potatoes loosen the yogurt and the coating slides off.
Marinate 45 to 60 minutes in the fridge. Longer than 2 hours and the salt starts to soften the potatoes again.


Malai Aloo Tikka (Creamy Restaurant-Style Potato Skewers)

Ingredients
For the potatoes
- 1 lb baby potatoes 500 to 550 g
- 1 teaspoon salt for the boiling water
For the cashew paste
- 12 raw cashews
- 1 inch ginger chopped
- 3 garlic cloves
- 1 green chili optional, skip for mild
- 2-3 tablespoons water
For the marinade
- 1/2 cup hung curd or plain Greek yogurt about 120 g
- 3 tablespoons heavy cream or fresh malai
- cashew paste from above
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon white pepper
- 1/4 teaspoon ajwain (carom seeds)
- 1 teaspoon kasuri methi crushed
- 1/2 teaspoon salt or to taste
- 1 teaspoon oil or melted butter
Optional, for the skewers
- 1 small red onion petals separated
- 1 green or red bell pepper cut into 1-inch squares
To finish
- 1 tablespoon butter melted, for brushing

Instructions
Prep the potatoes
- Bring a pot of water to a boil. Add 1 teaspoon salt and the baby potatoes.
- Boil 8 to 12 minutes, until a knife meets a little resistance. You want 75 to 80 percent cooked, not mash-soft. Drain.
- Cool until you can handle them. Peel if the skins slip easily. Halve any that are larger than a golf ball. Pat dry.
Make the paste and marinade
- If the cashews are very dry, soak them in hot water 15 minutes, then drain.
- Blend cashews, ginger, garlic, and chili with 2 to 3 tablespoons water until completely smooth.
- In a large bowl, whisk hung curd, cream, cashew paste, coriander, garam masala, cardamom, white pepper, ajwain, kasuri methi, salt, and oil until thick and even. Taste. The marinade should be creamy and lightly sweet from the cashew, with a warm finish from the pepper. It should not taste like tandoori masala.
- Add the cooled potatoes, and the onion and capsicum if using. Toss with your hands until every piece is coated. Cover and refrigerate 45 to 60 minutes.
- Soak wooden skewers in water for 30 minutes so they do not burn.
Oven
- Heat the oven to 450°F (230°C). Line a baking sheet with foil and brush or spray it with oil.
- Thread potatoes, onion, and capsicum onto the skewers. Shake off extra marinade so it does not puddle.
- Bake 14 to 16 minutes. Broil 2 minutes, until you see brown spots on the edges.
Air fryer
- Heat the air fryer to 380°F (190°C).
- Arrange skewers or loose pieces in a single layer. Do not stack them.
- Cook 10 to 12 minutes, shaking or turning once, until the coating looks set and the edges brown.
Tawa
- Heat a large tawa or skillet over medium. Brush with oil or ghee.
- Cook the skewers, turning often, until the marinade dries and the potatoes turn light gold, 8 to 10 minutes.
- For a restaurant char, hold each skewer over a medium-high flame 30 to 60 seconds, turning.
Serve
- Brush with melted butter while hot. Add a pinch of chaat masala if you want a little tang. Serve immediately with lemon and mint chutney.
Notes

Tips from testing
If the potatoes fall apart, they cooked too long in the water. There is no save once they are mash-soft. Next batch, start checking at 8 minutes.
If the marinade slides off, the yogurt was thin or the potatoes were still warm. Strain the yogurt longer, or switch to Greek. Pat the potatoes dry.
If the coating burns before the potatoes heat through, the marinade was too thick with loose drips on the tray, or the air fryer was packed. Shake off extra, give each piece space, and drop the air fryer to 370°F if your basket runs hot.
If it tastes like tandoori, you added chili powder. Leave it out. Serve extra chili on the side for people who want heat.
What to serve with malai aloo tikka
Mint chutney is the usual dip. Lemon and raw onion on the side. I like a small bowl of cucumber raita if the rest of the table is spicy.
For a mixed starter board, keep this as the ivory skewer and let paneer tikka salad handle the red side. Leftover pieces tuck into naan the next day with more chutney.
