How to Make Palak Paneer Alfredo Pasta

1. Blanch the spinach

Bring a pot of water to a boil. Add the spinach and cook 30 to 45 seconds, just until it collapses and turns vivid green. Drain and plunge into ice water. Squeeze out as much liquid as you can. This keeps the sauce bright instead of muddy.

2. Blend the green paste

Add the squeezed spinach, chopped tomato, and cilantro to a blender. Blend until smooth, adding a splash of water only if the blades need help. You want a thick puree, not a drink. Set aside.

3. Pan-fry the paneer

Pat the paneer cubes dry. Heat 1 tablespoon ghee in a wide pan over medium heat. Fry the cubes until lightly golden on a few sides, about 3 to 4 minutes. Transfer to a plate. Do not cook them until rubbery. Soft centers are the point.

4. Build the spiced base

In the same pan, add the remaining ghee. Toast the cumin seeds and optional dried chilies until the cumin smells nutty. Add minced ginger and garlic; cook about 30 seconds until fragrant. Stir in the chopped onion and cook 2 to 3 minutes until soft and translucent, not browned hard.

5. Cook the palak paste

Pour in the spinach puree. Stir in garam masala, crushed kasuri methi, and salt. Cook 3 to 5 minutes on medium, stirring, until the raw edge cooks off and the sauce thickens slightly. Taste. It should smell warm and green, not grassy.

6. Boil the pasta

Meanwhile, cook the pasta in well-salted water until just al dente. Reserve 1 cup pasta water, then drain.

7. Alfredo finish and toss

Lower the heat under the spinach sauce. Stir in the cream, butter, and grated parmesan until smooth and glossy. Fold in the pasta and pan-fried paneer. Add a splash of pasta water only if the sauce needs to loosen. Finish with a spoonful of cream on top if you want that restaurant swirl. Serve hot.

  • 1/4 cup grated parmesan cheese up to 1/3 cup
