Some evenings I want the smoky edge of a tandoor without turning on a full curry night. That is when I roast spiced tofu until the corners darken, then drop it onto something cold and crunchy. This Tandoori Tofu Salad is that plate: heat on top, cool salad underneath, and a mint yogurt drizzle that keeps everything Jain.

I started making it after one too many “tandoori tofu” recipes online that began with garlic paste and onion powder. My kitchen skips both, so I rebuilt the marinade with yogurt, Kashmiri chili, cumin, coriander, and a clean spice blend I actually trust. The tofu still tastes like tandoori night. The salad still tastes like summer lunch.

What Makes This Jain Tandoori Tofu

Classic tandoori marinades lean on ginger-garlic paste and often onion powder. Jain cooking skips those, so the yogurt and spices have to carry the color and aroma. Kashmiri chili gives red without raw heat. Cumin and coriander bring earth. A pinch of garam masala or a store-bought tandoori masala with a clean label (no onion, no garlic) rounds it out. Lemon keeps the marinade bright. Optional hing and kasuri methi add depth that still fits a Jain kitchen.

The tofu needs a good press. Wet tofu steams instead of roasting, and the marinade slides off. I learned that the messy way: a soft block that looked pink in the bowl and pale on the tray. Now I wrap it, weight it for at least fifteen minutes, and pat it dry again before coating.

Pro tip: Check the tandoori masala jar. Many popular blends list onion and garlic. If yours does, skip the jar and use the spice list in the method below. Same red color, safer for Paryushan and everyday Jain meals.

How to Make Tandoori Tofu Salad

1. Press and cube the tofu

Drain the tofu. Wrap it in a clean kitchen towel, set a heavy pan on top, and press for 15 to 20 minutes. Pat dry, then cut into bite-size cubes or thick slabs. Dry surfaces help the marinade cling and the edges char.

2. Whisk the marinade

In a bowl, whisk yogurt, Kashmiri chili, cumin powder, coriander powder, turmeric, garam masala or Jain-safe tandoori masala, lemon juice, oil, salt, and optional hing and crushed kasuri methi. Taste. It should smell warm and citrusy, not flat. Add a pinch more chili if you want deeper color.

3. Marinate briefly

Toss the tofu in the marinade until every side is coated. Fifteen to twenty minutes on the counter is enough while you chop the salad. Longer is fine in the fridge, but do not leave yogurt-marinated tofu overnight if you want firm cubes. The acid softens the texture.

4. Roast until the edges darken

Spread the tofu on a lined baking sheet with space between pieces. Bake at 400°F (200°C) for 20 to 25 minutes, flipping once, until the edges look toasted and the marinade looks set. Air fryer: 375°F (190°C) for 12 to 15 minutes, shaking once. If you already make Air Fryer Tofu Tikka, use that same spacing habit here so the cubes crisp instead of steam. The first batch I made was crowded on one tray and steamed pale. Give the cubes room.

5. Build the salad and mint drizzle

Dice cucumber, tomato, and capsicum. Tear lettuce or shred cabbage. Whisk yogurt with finely chopped mint, lemon, cumin, salt, and enough cold water that it falls from a spoon in a ribbon. Toss the vegetables with a little lemon, salt, and coriander. Pile onto plates, add hot tandoori tofu, and spoon the mint drizzle over the top.

The contrast matters: warm spiced tofu, cold crunch, cool mint. If everything sits dressed together for an hour, the greens wilt and the tofu cools into something less exciting. Assemble when you are ready to eat.

Ingredients
  

Tandoori tofu

  • 14 oz extra-firm tofu 400 g; pressed 15–20 minutes, then cubed
  • ½ cup plain yogurt thick dahi or Greek yogurt; plant yogurt for vegan
  • 1 tbsp lemon juice fresh
  • 1 tbsp oil neutral or olive
  • 1 tsp Kashmiri chili powder for color; add a pinch more for deeper red
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp garam masala or Jain-safe tandoori masala (no onion/garlic)
  • ½ tsp salt or to taste
  • 1 pinch hing asafoetida; optional
  • ½ tsp kasuri methi crushed; optional

Salad

  • 4 cups lettuce or mixed greens; torn, or use shredded cabbage
  • 1 cup cucumber diced
  • 1 cup tomato diced, about 1 medium, or cherry tomatoes halved
  • 1 medium capsicum yellow or red bell pepper, diced
  • 2 tbsp coriander leaves chopped
  • 1 tsp lemon juice for tossing vegetables
  • salt to taste, for vegetables

Mint yogurt drizzle

  • ½ cup plain yogurt plant yogurt for vegan
  • ¼ cup fresh mint leaves finely chopped
  • 1 tbsp lemon juice
  • ¼ tsp cumin powder
  • ¼ tsp salt or to taste
  • 2 tbsp cold water plus more as needed to thin to a ribbon

Instructions

Notes

Check packaged tandoori masala labels for onion and garlic. If present, use the single-spice mix in this card instead.
Extra-firm tofu only. Soft or silken tofu will not hold cubes in a yogurt marinade.
For vegan, use thick unsweetened plant yogurt in the marinade and drizzle; start with less water.
Store leftover roasted tofu airtight in the fridge up to 3 days. Reheat in a hot pan or air fryer, then assemble a fresh salad.
Keep dressing and greens separate for meal prep; assemble just before eating.

Tips From My Kitchen

  • Extra-firm tofu only. Soft or silken tofu falls apart in a yogurt marinade.
  • If the marinade looks thick, add one teaspoon water. If it looks watery, add one more spoon of yogurt.
  • For vegan plates, use a thick unsweetened plant yogurt in both marinade and drizzle. Start with less water; many plant yogurts are already loose.
  • Leftover roasted tofu keeps 3 days in the fridge. Reheat in a hot pan or air fryer so the edges crisp again before assembling a fresh salad.
  • A tiny pinch of chaat masala on the vegetables is fine if your brand is onion-garlic free. Taste first.

FAQs

Is this vegan?

Use plant yogurt in the marinade and the mint drizzle. Skip dairy yogurt. The rest of the bowl is already plant-based.

Can I make this ahead?

Press and marinate the tofu up to a few hours ahead. Roast close to serving. Chop vegetables and whisk the mint drizzle up to a day ahead; store separately. Assemble just before eating.

What if I only have soft tofu?

It will not hold cubes well. Use it crumbled into the salad after a shorter roast, or wait until you have extra-firm tofu. Texture is the whole point of this tofu salad.

How do I know my tandoori masala is Jain?

Read the ingredient list. If you see onion, garlic, or “spices” without a clear Jain claim, make the mix from single spices instead. Kashmiri chili, cumin, coriander, turmeric, and garam masala cover most of the flavor.

Why is my tofu pale and soft?

It was not pressed enough, the tray was crowded, or the oven was not hot enough. Press longer, spread the cubes out, and roast until the edges look toasted.

Is this gluten-free?

Yes, as written. Check spice blend labels if you use a packaged tandoori masala.
