Chickpea pesto pasta with corn, garlicky chickpeas and blistered tomatoes

The first time I made this, it was one of those nights where the fridge had half a bag of cherry tomatoes, a can of chickpeas, and corn kernels from a cob I had grilled the day before. I wanted pasta, but not a heavy cream sauce. I also wanted it to feel like a full meal without standing over the stove for an hour. So I did what I always do when summer produce meets an Indian pantry: I blistered the tomatoes, spiced the chickpeas with cumin and garlic, and whisked basil pesto with hung curd for something creamy but still bright. Some nights I use ricotta instead, which makes the dressing milder and a little richer.

Pesto Corn Pasta with Garlicky Chickpeas is the result: a chickpea pesto pasta with sweet roasted corn, jammy blistered tomatoes, and chickpeas that actually taste like something (not just beige protein balls), all tossed with short pasta and a creamy pesto dressing. I serve it warm or at room temperature over a big handful of arugula, which keeps it light and stretches the bowl when friends show up unannounced. It comes together in about 30 minutes and tastes like the kind of summer dinner you eat outside with cold water and zero urgency.

If you have pesto, chickpeas, and corn, let’s make this together.

Why This Chickpea Pesto Pasta Works

Most pesto pasta recipes stop at noodles plus jarred sauce. That is fine for a Tuesday, but it rarely feels like a complete dinner. Chickpeas fix the protein gap, and roasting the corn (even quickly in a hot pan) brings out sweetness that raw kernels never give you. Blistering cherry tomatoes in the same pan adds acidity and little pockets of jammy tomato that cling to the pasta.

The Petite Paprika twist is in two places. First, the garlicky chickpeas get cumin, Kashmiri chili, and a pinch of chaat masala at the end, so they taste warm and savory instead of plain. They carry the main protein here alongside whatever creamy element you choose for the dressing. Second, I whisk ricotta or hung curd into the pesto. Ricotta gives a mild, lush finish; hung curd keeps things tangier and lighter. Both work beautifully with the sweet corn and basil. How to Make Pesto Corn Pasta with Garlicky Chickpeas

Cook the pasta. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Reserve 1/2 cup pasta water, then drain. Do not rinse.

Roast the corn and blister the tomatoes. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add corn kernels and cook 4 to 5 minutes, stirring occasionally, until lightly charred in spots and smelling sweet. Push corn to one side. Add cherry tomatoes cut-side down. Let them sit 2 to 3 minutes without moving until the skins wrinkle and begin to burst. Stir everything together for 1 minute. Transfer to a large bowl.

Make the garlicky chickpeas. In the same skillet over medium heat, add another tablespoon olive oil and the sliced garlic. Cook 30 to 45 seconds until fragrant and just golden at the edges. Do not let it brown or it will taste bitter. Add drained chickpeas, cumin, Kashmiri chili, salt, and pepper. Cook 3 to 4 minutes, stirring, until the chickpeas are lightly crisp at the edges and coated in spice. Finish with chaat masala off heat. Add to the bowl with corn and tomatoes.

Toss with pesto dressing. In a small bowl, whisk pesto with ricotta or hung curd until smooth. Add the cooked pasta, pesto mixture, and 2 to 3 tablespoons pasta water to the bowl. Toss until everything is coated. Add more pasta water a tablespoon at a time if it looks dry. Taste and adjust salt.

Serve. Divide arugula among plates or one large platter. Spoon the pasta over the greens. Finish with extra chaat masala or chili flakes if you like. Serve warm or at room temperature.

Tips for the Best Results

Pro tip from our kitchen: Blister the tomatoes cut-side down and resist the urge to stir for the first two minutes. I used to shuffle them around and ended up with steamed tomatoes instead of jammy ones. Let the pan do the work.

  • Pat chickpeas dry before they hit the pan. Wet chickpeas steam instead of crisping.
  • Use good pesto. Store-bought is fine; homemade basil pesto stays greener if you add it off direct heat.
  • Ricotta vs hung curd: Ricotta makes a milder, creamier sauce. Hung curd (or thick Greek yogurt) adds tang and feels lighter. Use whichever you have.
  • For a vegan version, use dairy-free pesto and thick coconut yogurt in place of ricotta or hung curd.
  • Make-ahead: Toss everything except arugula, store covered in the fridge up to 2 days, and bring to room temperature before serving.

FAQs

Q1. Should I use ricotta or hung curd?
Either works. Ricotta gives a mild, creamy, slightly sweet sauce that feels closer to classic Italian pesto pasta. Hung curd (or thick Greek yogurt) adds tang and keeps the dressing lighter. I switch depending on what is in the fridge.

Q2. Can I make this vegan?
Use dairy-free pesto and thick coconut yogurt or unsweetened plant yogurt in place of ricotta or hung curd. The spiced garlicky chickpeas still make this a filling meal.

Q3. Can I use store-bought pesto?
Absolutely. Look for a basil pesto with a short ingredient list (basil, olive oil, nuts, garlic, salt). Whisk in the ricotta or hung curd just before tossing so the dressing stays bright green.

Q4. Can I serve this cold as pasta salad?
Yes. Cook the pasta, cool it slightly, then toss with everything else and refrigerate. It keeps well for picnics and lunchboxes. I still recommend blistering the tomatoes and corn for flavor even if you serve chilled.

Q5. My pesto turned brown. What happened?
Basil oxidizes when exposed to heat and air. Add pesto off the hottest part of the pan, toss quickly, and serve soon after. A squeeze of lemon juice in homemade pesto helps it stay green longer.

This chickpea pesto pasta bowl has become my go-to when corn shows up at the farm stand and I do not want to turn on the oven. The combination of sweet corn, tangy pesto dressing, and those crisp-edged chickpeas is the kind of summer dinner that feels effortless but still tastes like you planned it.

If you make this, tell me in the comments: do you serve it warm over arugula or cold as pasta salad? I am firmly team warm-with-greens, but I have seen both camps and I respect them.
