Every April, the moment raw mangoes appear at our local vendor’s cart, I know summer has properly arrived. My mother would bring home a kilogram at a time: some for pickling, some for dal, and always a few set aside for an afternoon snack with chilli powder and salt. That sharp, sour crunch was the taste of Indian summer.

This Spicy Raw Mango Salad with Crispy Paneer is my grown-up, meal-worthy version of that memory. Julienned raw and ripe mango, crunchy carrots, cucumber, and red onion all tossed in a zingy chaat-style dressing, then piled high with golden crispy paneer and a handful of roasted peanuts. It comes together in about 20 minutes, needs almost no cooking, and is genuinely filling enough for lunch.

What Makes This Raw Mango Salad Different

Most mango salads you’ll find online lean Thai — fish sauce, rice vinegar, shredded cabbage. This one is completely Indian pantry.

The dressing is built around kala namak (black salt), chaat masala, green chilli, jaggery, and fresh lime juice. That combination gives you tart, earthy, a little funky, and just the right amount of heat: exactly like chaat from a street stall, but on a bowl of crunchy salad.

Using both raw and ripe mango is intentional. Raw mango brings the sharp sourness. Ripe mango adds sweetness and a softer texture. Together they create a balance that neither achieves on its own.

The crispy paneer on top is not a garnish — it’s the protein anchor. Pan-seared until golden, it soaks up the dressing beautifully and makes this substantial enough to serve as a main.

Ingredients
  

For the salad

  • 1 medium raw mango firm, green; peeled and julienned
  • ½ ripe mango julienned
  • 1 medium carrot peeled and julienned
  • ½ cucumber seeds removed; julienned
  • 1 small red onion thinly sliced into half-rings
  • 200g paneer, cut into 1.5cm cubes
  • 1 tsp neutral oil
  • ¼ cup roasted unsalted peanuts
  • Small handful fresh mint leaves
  • Small handful fresh coriander leaves

For the chaat dressing

  • Juice of 1½ limes (about 3 tbsp)
  • 1 green chilli finely chopped
  • ½ tsp chaat masala
  • ¼ tsp kala namak black salt
  • 1 tsp jaggery powder
  • Salt to taste

Instructions
 

Sear the paneer

  • Heat oil in a non-stick pan over medium-high heat. Add paneer cubes in a single layer.
  • Cook undisturbed for 2 minutes until golden on the base, then turn and sear the other sides for 1–2 minutes. Season lightly with salt. Set aside.

Make the dressing

  • Whisk together lime juice, green chilli, chaat masala, kala namak, jaggery, and a pinch of salt until the jaggery dissolves. Taste — it should be tart, slightly sweet, and have a little heat.

Assemble

  • Combine raw mango, ripe mango, carrot, cucumber, and red onion in a large bowl.
  • Pour the dressing over and toss well to coat everything.
  • Transfer to a serving plate or bowl. Top with crispy paneer, roasted peanuts, mint, and coriander. Serve immediately.

Notes

Julienning tip: A mandoline with a julienne attachment makes quick work of the mango and carrot. If cutting by hand, aim for matchstick pieces about 5cm long and 3mm thick — they hold the dressing better than thin slices.
Jaggery dissolving: If using a block of jaggery, grate it finely before mixing into the dressing so it incorporates without chunks.
Make it vegan: Replace paneer with 200g firm tofu. Press the tofu for 15 minutes first to remove excess moisture, then sear exactly as you would the paneer.
Soaking the onion: If raw onion is too sharp for your taste, soak the sliced rings in cold water for 10 minutes, then drain. Removes the sharpness without losing the crunch.
Storage: The dressed salad is best eaten within an hour as the vegetables soften. Store the dressing separately if making ahead, and toss just before serving. Crispy paneer can be re-seared the next day.

Tips & Substitutions

Choosing your raw mango: Look for firm, completely green mangoes with no yellow patches. The firmer, the better for julienning — soft raw mangoes turn mushy once dressed. If your raw mango is very sour (aam panna-level tart), start with half the amount and add more to taste.

Protein swaps: Crispy tofu works exactly like paneer here (press and sear it the same way). Boiled chickpeas are a great no-cook option if you want to skip the pan entirely. Making it ahead: Prepare the vegetables and dressing separately and refrigerate. Sear the paneer just before serving. Cold, re-dressed paneer loses its texture quickly.

No chaat masala? Combine ¼ tsp cumin powder, ¼ tsp dried mango powder (amchur), and a pinch of black pepper as a substitute. The flavour is slightly different but close enough.

FAQs

Can I use only raw mango and skip the ripe mango?

Yes. The ripe mango adds sweetness to balance the tartness — without it, the salad skews more sour. You can compensate by adding a little extra jaggery in the dressing (up to 2 tsp) to bring back that balance.

Is this salad gluten-free?

Yes, every ingredient here is naturally gluten-free. Just double-check your chaat masala brand — some commercial blends include flour as a filler.

Can I make the dressing ahead of time?

The dressing keeps well in the fridge for up to 3 days in a sealed jar. The lime flavour mellows slightly by day 2, so you may want to add a fresh squeeze before using.

What if I can’t find kala namak (black salt)?

Regular sea salt or Himalayan pink salt works fine. You’ll lose the signature sulphuric “chaat” note, but the salad is still delicious. Kala namak is widely available at Indian grocery stores and online.

Can I add more vegetables?

Definitely. Thinly sliced radishes, raw beetroot (also julienned), or blanched edamame all work beautifully here. This salad is forgiving — keep the dressing ratio the same and add whatever you have.

Closing

This raw mango salad has become my go-to for those long May afternoons when the mangoes are at their most tart and I need something refreshing but actually filling. The chaat dressing alone is worth making. I catch myself spooning it over everything from roasted vegetables to plain rice.
