Aam Panna or Baflo is a famous summer drink in Gujarati households.
It is traditionally made by smoking mango. But you can speed up the process by pressure cooking green mango.
This drink requires just 4 ingredients. Green mango, black salt, black pepper and jaggery. You can make a big batch of the concentrate and keep it handy to indulge in this tangy refreshing drink on hot summer days.
Baflo or Aam Panna
Baflo is the Gujarati name for aam panna. Traditionally baflo is made from roasted green mango, jaggery, black salt, and black pepper. Baflo or aam panna is a staple drink in many households on hot summer days.

Ingredients
- 1 Green mango or unripe mango
- 1 tbsp Black Salt or Salt or to taste
- 3/4 cup Jaggerry or Sugar adjust according to mango's sweetness
- 1/2 tsp Black pepper
- 5-6 cups Water chilled
Instructions
- Roast green mango (You can also remove the skin make the pieces and pressure cook it in the cooker or instant pot)
- The skin will turn black and the outer layer would feel a little softer
- Let it cool down and the skin will come out easily
- Roughly chop the mango
- In a blender, add roasted green mango pulp, salt, black pepper powder, and jaggery.
- Blend it to smooth paste
- Keep the mixture in the refrigerator.
- For serving, add two tbsp of the mixture into the glass, some ice, chilled water and stir well.
Notes
- Adjust sweetness (sugar or jaggery) according to the sweetness of raw mango
- Make a big batch by doubling or tripling the quantity.
- This concentration stays good for up to a month in the refrigerator
