Mango sticky rice

Sweetened rice is prepared by adding coconut milk and served with sweet coconut sauce and fresh mango. It can be made on the stove top or instant pot.

Ingredients
  

For rice

  • 1 cup glutinous rice
  • 2/3 cup water
  • 2/3 cup coconut milk use full fat milk
  • 1/4 cup sugar
  • 1/8 tsp salt

For sweet sauce

  • 1 cup coconut milk
  • 3 tbsp sugar
  • 1/4 tsp salt
  • 1 tbsp cornstarch

Instructions
 

For Rice

  • In a bowl, take 1 cup rice and rinse it with cold water until water turns clear.
  • Drain rice using strainer. This step is important. Else rice might have water in it.
  • Now add 1.5cup water in instant pot. Place trivet. That came with instant pot.
  • Transfer rice to steel bowl that fit inside instant pot. Add 2/3 cup water to it.
  • Place steel bowl on top of trivet inside instant pot.
  • Close the lid and pressure cook for 12minutes. Let the pressure release naturally for 15 minutes and then release pressure manually.
  • While rice cooks, take 2/3 cup of coconut milk in a pan on medium heat. Add 1/4 cup sugar and 1/4 tsp salt to it. Stir until sugar dissolves. Set aside.
  • Once rice is cooked, transfer it to mixing bowl and add prepared mixture to it and give it a good mix.
  • Cover and leave it for around 45 minutes.

For sweet sauce

  • When it is about 45minutes, start preparing the sauce.
  • To a pan on medium heat, add remaining coconut milk for the can, or 1 cup coconut milk, 3 tablespoon sugar, 1/4 teaspoon salt. Stir until sugar melts.
  • When suagar is dissolved, take a small bowl and transfer 2 tablespoons of mixture to it. Now add 1 tablespoon cornstarch to it. Mix it until you have smooth paste.
  • Add this slurry back to the mixture and stir continuously.
  • Turn off the heat when mixture reaches desired thickness.
  • Remove mango skin and slice it.
  • In the serving plate arrange mango slices. Place sweetened rice and drizzle prepared sauce on top. Sprinkle white and black sesame seeds. Serve immediately.
