- Juice of 1/2 lemon
- 3-4 ice cubes
- 2 tbsp water, or as needed
For the Slaw
- 1/4 cup julienned carrots
- 1/4 cup julienned green cabbage
- 1/4 cup thinly sliced onion
- 1/4 cup julienned purple cabbage
- Pinch of salt
For Assembly
- 1 loaf pull-apart pav or dinner rolls (12-count)
- 4-6 slices processed cheese or mozzarella
- 2-3 tbsp shredded cheese (optional, for extra melt)
- 2 tbsp butter, softened

How to Make Cheesy Vada Pav Sliders
Make the Garlic Lasun Chutney
Dry-roast the sesame seeds and peanuts in a small pan over medium heat until lightly golden, about 2 minutes. Let them cool completely. Add the dried red chillies, garlic, grated coconut, toasted sesame, peanuts, amchur, red chilli powder, and salt to a blender. Pulse to a coarse, dry crumble. Do not add water. The chutney should be dry and spreadable, not a paste.

Make the Green Chutney

- Bake for 8-10 minutes until the cheese has fully melted and the bread is warm through. Open the foil for the last 2 minutes if you want the top to get a little toasty.
- Pull apart and serve immediately.

Tips and Variations
Make it ahead. You can assemble the whole loaf (without the garlic butter baste) the night before, wrap it in cling film, and refrigerate. Brush with garlic butter right before baking.
Cheese swaps. Processed cheese slices melt evenly and have the classic party taste. If you prefer something with more stretch, use mozzarella. For a sharper flavor, a mild cheddar works well too.
Vegan version. Skip the cheese entirely and use vegan butter or coconut oil mixed with the lasun chutney for the baste. The sliders still taste full and satisfying because the two-chutney-potato combination is doing a lot of work.
Bread options. Dinner rolls work great for individual sliders. You can also use a sourdough boule if you want a more rustic version. Avoid very soft sandwich bread since it compresses too much under the filling.
