This coconut cashew ladoo is what I make when Diwali energy hits but I do not have hours for stove-top mithai. Creamy like nariyal barfi, with the richness of kaju katli, without either recipe’s long simmer.

Coconut Cashew Laddoo

Ingredients
For the laddoo
- 1 cup raw cashews
- 1/2 cup unsweetened shredded coconut
- 1/2 cup pitted dates
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
Instructions
Make the laddoo
- Process cashews and dates in a food processor until a thick paste forms.
- Add shredded coconut, coconut oil, and vanilla extract. Pulse until evenly combined.
- Roll into 1-inch laddoo. Optionally roll each ball in extra shredded coconut.
- Chill 30 minutes to firm up.
