Kutchi Dabeli or Kuchchi Dabeli or Dabeli is popular street food in India. Originated from Kutch region of Gujarat, but now popular street food all over in Gujarat and Maharashtra, Kutchi Dabeli is a kind of Indian burger.  Vada pav is another popular Indian style burger, originated in Maharashtra. Most of the street food vendors who sell one of them serve the other one too.

Dabeli making is easy if you have all the chutneys ready. So I normally keep the sweet, green and garlic chutney ready at least a day before.

Also, dabeli stuffing can be made in advance and stays good for hours. Just don’t add masala peanuts if you are going to use the stuffing after a while.

Kutchi Dabeli is balanced sweet, tangy and spicy snack made from boiled potatoes and special dabeli masala stuffed between pav or burger bun.

If serving dabeli at a party, prepare all the chutneys at least a day in advance and prepare the stuffing a few hours before and do not spread peanuts on top, add it right before you are serving it.

If Dabeli masala is not easily available near you. You can use garam masala or pav bhaji masala instead. Dabeli will still taste good.

Ingredients
  

For making Dabeli stuffing

  • 2 tbsp oil
  • 1 small onion chopped
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • 2 tbsp dabeli masala I used store bought one
  • 2 tbsp water divided (optional)
  • 3 medium potatoes boiled and mashed
  • Salt to taste
  • 1 tbsp sweet chutney
  • ¼ cup onion chopped
  • ¼ cup pomegranate arils
  • ¼ cup coriander leaves
  • ¼ cup masala peanuts
  • For assembling Dabeli
  • 5-6 pav or bun sliced
  • Sweet chutney
  • Garlic chutney
  • Pomegranate arils
  • Masala peanuts
  • Roasting Dabeli
  • Butter
  • Serving dabeli
  • ¼ cup sev
  • Green chutney
  • Sweet chutney

Instructions
 

Making Dabeli stuffing

  • Heat oil in a thick bottomed pan
  • Once the oil is hot, add onions and sauté them till translucent
  • Now add chili powder, turmeric powder, and Dabeli masala. Mix them well
  • My dabeli masala is like a thick paste so I’ve added 1 tbsp water here. If yours is powdery, you can skip adding water
  • Stir the onion with masala for few seconds
  • Now add boiled potatoes, remaining 1 tbsp water and mix everything
  • Now add salt, sweet chutney and mix it well
  • Let the stuffing cook for a few minutes
  • Now transfer the stuffing into a bowl and spread chopped onion, masala peanuts, pomegranate arils, and coriander leaves

Assembling Dabeli

  • Take pav/bun and apply garlic chutney on one side and sweet chutney on the other side
  • Now add dabeli stuffing on one side of pav and add more masala peanuts and pomegranate arils on top and cover it with another side of pav
  • Repeat it for other pav/bun

Roasting Dabeli

  • Heat butter on griddle and roast prepared dabeli buns on both sides

Serving dabeli

  • Take the roasted buns and roll it over sev and serve dabeli immediately with sweet chutney and green chutney

Notes

If you don’t like garlic chutney, you can replace it with green chutney
If you don’t have masala peanuts, replace it with plain peanuts
If you don’t have dabeli masala, use garam masala or pav bhaji masala. The dabeli is still going to taste good

How to Make Dabeli Step by Step

Making Dabeli stuffing
