Black bean, corn & avocado filling (mashed)

  • 1 tbsp neutral oil
  • ½ medium onion, finely diced
  • 1 jalapeño, seeded for mild or minced with seeds for hot, finely chopped
  • 1 cup frozen corn kernels, thawed, or kernels from 1 ear
  • 1 (15 oz) can black beans, drained and rinsed
  • 2–3 tbsp taco seasoning (store-bought packet or your own blend; if salty, start with 2 tbsp)
  • ¼–⅓ cup water or vegetable stock, as needed
  • ½ ripe avocado, diced
  • Salt and lime juice to taste
  1. Warm oil in a skillet over medium heat. Cook onion until soft, 4–5 minutes. Add jalapeño; cook 1 minute.
  2. Stir in corn and black beans. Add taco seasoning and splash of water. Simmer 5–7 minutes, stirring, until most liquid is absorbed and flavors taste balanced (taco blends vary in salt).
  3. Off the heat, coarsely mash with a potato masher or fork until the mixture holds together but is not completely smooth. Fold in avocado and mash once more so streaks of green run through. Season with lime and extra salt only if needed. Let cool to warm before stacking so the panini does not steam from the inside.

Pico de gallo (for serving)

Rough chop so it stays scoopable on chips.

  • 2 medium tomatoes, diced
  • ¼ red onion, finely diced (or use drained quick pickles, chopped)
  • 1 small jalapeño, seeded and minced (optional)
  • ¼ cup cilantro leaves, chopped
  • 1 tbsp lime juice
  • Salt to taste

Stir and let sit 10 minutes. Taste again; tomatoes drink salt fast.

Assembly & grill (one panini)

Per panini

  • 1 panini roll, split horizontally (or 2 sturdy panini slices)
  • Softened butter or light oil, for outer bread
  • 2–3 tbsp chipotle sauce (inside)
  • Generous layer of mashed filling (about ½–⅔ cup warm, not piping)
  • 2 tbsp pickled red onions, drained
  • ½–¾ cup shredded four-cheese Mexican blend (or a mix of Monterey Jack, cheddar, mozzarella, and asadero)
  • Pico de gallo and tortilla chips, for serving
  1. Heat a panini press, large skillet, or griddle over medium heat.
  2. Open the bread. Spread chipotle sauce on both cut sides.
  3. On the bottom half: half the cheese, then the mashed filling, then pickled onion, then remaining cheese. Close the bread.
  4. Brush or spread butter or oil on the outer top and bottom. Grill until both sides are golden and crisp and the cheese is melted (if using a skillet, press gently with a second pan or foil-wrapped brick), flipping once if not using a press with two plates.

Per 2 panini

  • 2 panini rolls or 4 slices panini bread; split
  • Butter or oil for grilling
  • About 1½ cups shredded four-cheese Mexican blend
  • Tortilla chips, for serving

Instructions
 

Quick pickled red onions

  • Dissolve sugar and salt in warm water, add vinegar or lime, pour over onions in a jar. Rest at least 15 minutes.

Chipotle sauce

  • Whisk ingredients until smooth; thin with water or lime if you want a looser sauce for chips.

Mashed filling

  • Sauté onion in oil until soft. Add jalapeño; cook 1 minute.
  • Add corn, beans, taco seasoning, and water. Simmer 5–7 minutes. Off heat, mash coarsely; fold in avocado; mash lightly again. Season; cool to warm before assembling.

Pico de gallo

  • Combine ingredients; rest 10 minutes; adjust salt. Drain excess liquid before serving if needed.

Assembly and grill

  • Spread chipotle sauce on cut sides of bread. Layer half the cheese, the mashed filling, pickled onion, then remaining cheese. Close; butter or oil the outsides.
  • Grill both sides until crisp and cheese melts. Rest briefly, slice if desired.
  • Serve with pico de gallo and tortilla chips.

Notes

Thick, warm (not steaming) filling grills without blowing out the sides.
If taco seasoning is salty, start with 2 tbsp and adjust with cumin and smoked paprika instead of more salt.
Double the filling for tacos or nachos later in the week.

FAQs

Can I make this vegan?
Use plant-based mayo for the chipotle sauce and a shredded vegan Mexican-style four-cheese blend. The filling is already vegan before cheese.

How much taco seasoning should I use?
Start with 2 tbsp, taste after simmering, then add more if the beans taste flat. Some blends are very salty; if yours is, use less and bump cumin and smoked paprika instead.

My filling is too wet for a panini.
Simmer a few more minutes before mashing, or mash firmer and let it cool slightly; a thick filling grills cleaner.

Can I prep ahead?
The mashed filling keeps 3 days refrigerated; reheat with a splash of water and mash again. Pickles and pico are best within a day or two (pico can go watery; drain before serving). Assemble and grill close to eating for the best crunch.

What if I do not have chipotle in adobo?
Use ½ tsp smoked paprika, a pinch of cayenne, and a few drops of hot sauce, whisked into mayo or yogurt.

Is this very spicy for kids?
Seed the jalapeño in the filling and keep chipotle sauce at 1 tsp adobo for the whole batch; serve extra minced jalapeño on the side for adults.
