By day four of Navratri, breakfast is sorted. Four o’clock is where the fast gets loud. I used to stand at the snack drawer, eat two store chips, then feel like I had broken the week.
I started keeping a small snack rotation instead: one chaat, one tikki, one tray roast, one jar of crunch, one glass of chaas. Same farali pantry. Different textures, so chai time does not taste like leftover khichdi.
These Navratri vrat snacks are the ten I actually cook: sabudana chaat in cups, two tikkis, suran fries, arbi roast, paneer tikka, a makhana namkeen jar, a jaggery chikki, baked raw banana chips, and masala chaas. Three of them need a salt or spice swap to stay strictly farali. I flag those below.
You do not need all ten. Pick one warm snack and one crunchy jar, then repeat them through the nine days. A plate of only boiled potato used to leave me hunting the cupboard by evening.
What Makes a Navratri Vrat Snack
Navratri is nine nights of worship for the Goddess, and many homes keep a vrat (fast) with a smaller pantry: no onion, no garlic, no regular wheat or rice, and sendha namak (rock salt) instead of table salt.
A farali snack on our table is usually a fasting tuber or grain, peanut or yogurt, and something crisp. The ones that show up most are sabudana (tapioca pearls), sama / samvat (barnyard millet), singoda (water chestnut flour), potato, sweet potato, suran (elephant foot yam), arbi (taro), paneer, and makhana (fox nuts).
Family rules vary. Some kitchens skip mustard seeds, hing, or chaat masala. Some allow kala namak in drinks. Use sendha namak, skip onion and garlic, and check the one spice blend your family treats as off-limits before you cook.

1. Sabudana Layer Chaat in Cups (Vrat-Friendly Party Chaat)
Last Navratri my cousin still wanted “something fun to hold” after a thali of khichdi. Sabudana layer chaat stacks peanut-lemon pearls, spiced potato, hung curd, and chutney in clear cups so nobody gets a soggy plate. Prep the layers up to two days ahead. Assemble when guests walk in. Skip onion, tomato, and sev on fasting days.

2. Sama Rice Cutlets (Potato Vrat Tikki)
Sama rice cutlets (samak aloo tikki, moraiyo cutlets) are leftover cooked sama mashed with potato, ginger, chili, and crushed peanuts, then shallow-fried until the edges go golden. Cool the millet completely first. Warm, wet sama makes sticky cutlets that break in the pan. If the mash still feels loose after chilling, work in 1 to 2 tbsp singhare flour before shaping.

3. Sweet Potato & Peanut Tikki
Sweet potato tikki (shakarkandi tikki) is the orange one I cook when potato-only mash feels tired. Bound with singoda flour and finely ground roasted peanuts, then shallow-fried or air-fried. Mash the sweet potato while it is warm, then cool the mash fully before adding flour. Warm, steamy mash turns sticky and needs extra singoda.

4. Air-Fried Yam (Suran) Fries
Air fryer suran fries (jimikand) are the crisp chai snack when I do not want a pot of oil. Lemon, sendha namak, black pepper, a little peanut oil. Toss the cut sticks in lemon and rest 10 minutes, then pat them bone-dry. Moisture is what keeps air-fryer fries from crisping. Wear gloves when you peel. The itch is real.

5. Roasted Arbi (Taro) Roast
Arbi roast is the coin-style cousin on the same plate: boiled arbi tossed with ajwain, cumin, amchur, and sendha namak, then roasted until the edges crisp. Boil until a knife slips in with light resistance, about 12 to 15 minutes. Overboiled rounds mash when you toss them. The recipe dusts with a little rice flour. Swap singhare or skip the dusting if your vrat does not allow rice.

6. Vrat-Friendly Paneer Tikka
By day four last year my husband asked for “something that feels like restaurant food.” Vrat paneer tikka is hung curd, sendha namak, cumin, and a little mustard oil, then a soft char on the tawa, in the oven, or in the air fryer. Marinate 30 to 60 minutes. Longer than that, the lemon makes the cubes crumbly. Skip packaged tikka masala. Garlic hides in those jars.

7. Roasted Makhana Mix
Roasted makhana mix is the jar I keep opening for chai: fox nuts, peanuts, cashews, a few raisins. Roast until a cooled piece shatters. If you jar it warm, steam softens everything overnight. The recipe as written uses mustard and chaat masala. Skip those two, use sendha namak, and the jar stays farali. When I want those same fox nuts in a dinner bowl, I cook makhana cashew curry.

8. Makhana Chikki (Jaggery, Crunchy)
Makhana chikki is the sweet snap on this list: roasted fox nuts in a thin jaggery bind. My first batch stayed chewy because I pulled the syrup at soft-thread. Wait for a firm soft-ball that holds shape in cold water, about 112 to 115°C. That extra minute is the difference between brittle and sticky.

9. Baked Raw Banana Chips
Baked raw banana chips (kaccha kela, green plantain) are the oven path when I want Kerala-style crunch without a kadhai of oil. Slice about 2 mm, soak, then pat until the towel barely picks up moisture. I rushed the drying once and the chips stayed leathery in the middle. This one is not a default farali recipe as written. Use sendha namak and skip hing or onion-garlic spice mixes.

10. Masala Chaas
Masala chaas is the glass I pour after a fried snack: roasted cumin, kala namak, mint, under 10 minutes. Start with cold yogurt and ice-cold water. Room-temperature Greek yogurt tasted chalky until I loosened it first. For vrat, swap the regular salt in the recipe for sendha namak. Keep kala namak if your house allows it.

Which recipe is best for beginners?
Start with masala chaas or roasted makhana mix. One is a jug and a whisk. The other is an air-fryer jar. Save the tikkis and chaat cups for when you want a hot plate or guests.
Can I make these ahead for a Navratri party?
Yes. Cook the sabudana and potato layers for the chaat cups up to two days ahead, then assemble the day you serve. Shape sama cutlets and sweet potato tikki and chill, then fry when hunger hits. The makhana mix and chikki keep in jars. Reheat fries and arbi in a hot oven so they crisp again.
What salt and spices are allowed on vrat days?

Are all ten recipes strictly farali?

How do I keep these vegan or gluten-free?
The tikkis, fries, arbi, makhana mix, banana chips, and chikki are already gluten-free if your flours and hing are. For vegan, cook in peanut oil, skip hung curd on the chaat and paneer tikka, and keep the banana chips and makhana mix as written. Chaas needs a thick unsweetened plant yogurt if you want a dairy-free glass.
