Crunchy roasted makhana mix with peanuts, cashews, almonds, and raisins in a light curry-leaf tempering. Easy fox nut namkeen for tea time.

Some evenings the chai is ready before I am, and someone is already asking for “the white popcorn.” That is makhana in our house: light, toasty fox nuts that disappear faster than chips when the jar is within reach.

This Roasted Makhana Mix is my go-to roasted makhana recipe: fox nuts tossed with peanuts and mixed dry fruits, then finished with a quick curry-leaf tempering. The air fryer does most of the work, so you get a crisp masala namkeen without babysitting a kadai the whole time.

Let’s roast a jar you will keep opening for chai, desks, and snack boards.

What is makhana?

Makhana (also called fox nuts or lotus seeds) is a classic Indian fasting and tea-time ingredient. In Gujarati and North Indian kitchens it shows up roasted with ghee and spices, simmered into kheer, or folded into namkeen mixes. The raw seeds look soft and chalky. Once roasted well, they puff lighter, sound hollow when you tap them, and taste like a clean, toasted crunch.

This version leans mix, not single-note masala makhana. Peanuts, cashews, almonds, and a few raisins stretch the jar and add bite so a handful feels more satisfying than fox nuts alone. Keep the oil light. The spice coat should cling, not slick.

Test note: Undercooked makhana stays chewy in the center even when the outside looks dry. Keep roasting until a cooled piece shatters lightly between your teeth. If you jar the mix while it is still warm, steam softens everything overnight.

If you already love makhana in dessert form, try rose coconut makhana kheer for a creamy contrast to this savory jar. Pair a scoop of the mix with a hot poha cutlet when you want jar crunch next to something crisp from the pan, or add a chaat-style scoop of avocado bhel on the same snack board. Protein chivda sits in the same tea-time lane earlier the same day. A sweet makhana chikki later in the week is a nice gift-box companion once that recipe is live.

Why this roasted makhana mix works

Fox nuts keep the base light and naturally gluten-free. Peanuts and dry fruits add roasted depth so the mix lasts through an afternoon chai. The tempering is short: mustard, cumin, curry leaves, turmeric, chili, and a pinch of chaat masala for that street-snack edge.

Use oil for a vegan jar, or swap in a spoon of ghee if that is how your family likes namkeen. Either way, cool the mix fully before the lid goes on.

How to roast makhana in an air fryer

This roasted makhana recipe stays crisp when you give the fox nuts enough time and cool them fully before jarring.

  • Start with clean, dry roasted fox nuts (makhana). Discard any pieces with dark spots or a musty smell.
  • Coat lightly. Too much oil makes the spice paste sticky instead of crisp.
  • Do not pack the air-fryer basket. Crowding steams the seeds. That is the key for how to roast makhana in air fryer without soft spots.
  • Taste one after it cools for 30 seconds. Warm makhana always feels softer than it will in the jar.
  • If the mix softens after a day, spread it on a tray and air fry 2 to 3 minutes at 300°F (150°C), then cool fully before re-jarring.

This style of makhana namkeen recipe also works in a wide kadai if you prefer the stovetop.

How to make roasted makhana mix

Air fry the makhana until hollow and crisp, toast the peanuts and dry fruits, then finish with a quick curry-leaf tempering. Cool completely before the jar lid goes on so the mix stays shatter-crisp.

Equipment

  • Air fryer
  • Mixing bowls
  • Small pan or tadka pan for tempering
  • Wide tray for cooling
  • Airtight jar for storage

Ingredients

Dry mix (air fryer)

  • 4 cups makhana (fox nuts)
  • 1/3 cup raw peanuts or lightly roasted unsalted
  • 1/4 cup raw cashews halved if large
  • 1/4 cup raw almonds whole or roughly chopped
  • 2 tablespoons raisins or golden raisins
  • 1 1/2 tablespoons neutral oil avocado, peanut, or light olive, divided
  • 1/2 teaspoon fine salt divided, plus more to taste

Tempering

  • 1 tablespoon neutral oil or ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 8-10 curry leaves
  • 1 green chili slit, optional
  • 1/4 teaspoon hing (asafoetida) gluten-free if needed
  • 1/2 teaspoon turmeric
  • 1/2-3/4 teaspoon red chili powder to taste
  • 1/2 teaspoon chaat masala or 1/4 tsp amchur
  • 1/4 teaspoon garam masala optional
  • 1 teaspoon powdered sugar or jaggery powder optional, balances the spice

Instructions

Roast the makhana

  • Preheat the air fryer to 320°F (160°C) for 3 minutes. Put the makhana in a large bowl. Drizzle with 1 tablespoon oil and 1/4 teaspoon salt. Toss until the seeds look lightly coated, not wet.
  • Air fry in 1 or 2 batches (do not pack the basket) for 6 to 9 minutes, shaking every 2 to 3 minutes, until the makhana sound hollow when tapped and taste toasted when cooled briefly. Tip onto a wide cooling tray.

Toast the mix-ins

  • Toss peanuts, cashews, and almonds with the remaining 1/2 tablespoon oil and a pinch of salt. Air fry at 320°F (160°C) for 3 to 5 minutes, shaking once, until the nuts smell roasted and look a shade darker. Add raisins only in the last 30 to 60 seconds so they warm without burning.
  • Add this mix to the makhana on the tray. Keep everything spread out so steam escapes.

Temper and finish

  • Heat 1 tablespoon oil or ghee in a small pan over medium heat. Add mustard seeds. When they sputter, add cumin seeds, curry leaves, and green chili. Stir 20 to 30 seconds. Lower the heat, add hing, turmeric, and red chili powder. Stir 5 seconds so the spices bloom but do not burn.
  • Immediately pour the tempering over the dry mix. Sprinkle chaat masala, garam masala if using, and powdered sugar if you want a slight sweet edge. Toss with a wide spatula until every piece looks evenly seasoned. Taste and add salt.
  • Cool completely on the tray, 20 to 30 minutes. Only then transfer to an airtight jar.

Notes

Doneness cue: A cooled makhana should shatter lightly, not bend. If it bends, roast 1 to 2 minutes more.
Batch the basket: Crowding steams the seeds. Two quick batches beat one soft tray.
Burn watch: Chili powder and turmeric go into the tempering off high heat. Burnt spice makes the whole jar bitter.
Mistake + fix: If the mix softens after a day, spread it on a tray and air fry 2 to 3 minutes at 300°F (150°C), then cool fully again before re-jarring.
Storage: Airtight jar at cool room temperature up to 2 weeks. Keep away from steam near the stove.

FAQs

Q1. Can I make this without an air fryer?
Yes. Dry-roast makhana in a wide kadai on low to medium-low heat, stirring often, until hollow and crisp. Toast peanuts, cashews, and almonds the same way. Finish with the same tempering. The air fryer just frees you from constant stirring.

Q2. Is this gluten-free?
Yes, when you use gluten-free hing (or skip hing). Makhana, peanuts, and the dry fruits are naturally gluten-free. Watch packaged chaat masala for wheat fillers.

Q3. Why is my roasted makhana still chewy?
It needed more time, or it was jarred warm. Keep roasting until a cooled piece snaps. Always cool fully on a tray before sealing the jar.

Q4. Can I make this vegan?
Yes. Use neutral oil instead of ghee in the tempering. The rest of the mix is plant-based as written.

Q5. Can I skip peanuts for a school lunch jar?
Yes. Add more cashews and almonds, or a handful of roasted sunflower seeds. The mix stays crunchy and still feels substantial.

Q6. How do I store leftovers?
Cool completely, then keep in an airtight jar at cool room temperature for up to 2 weeks. If humidity softens it, re-crisp in the air fryer for a couple of minutes and cool again before sealing.

Closing

This roasted makhana recipe keeps the evening chai jar habit, just with more dry-fruit crunch in every handful. Roast the fox nuts until they sound hollow, toast the peanuts and nuts, pour on a quick curry-leaf tempering, and wait until everything is fully cool before the lid goes on.
