Orange pistachio salad with mint in a cream bowl

Some weeks the fruit bowl is half navel oranges I bought for juice and never juiced. Last Thursday I peeled two of them over the sink after a heavy dal lunch, scattered roasted pistachios from a jar I keep for garnishing kheer, and tore mint over the top. Ten minutes later we had a bright plate that felt like a reset, not another cooked course.

Orange pistachio salad shows up in Mediterranean and Sicilian roundups with thin red onion almost every time. This version skips onion and garlic on purpose. Citrus zest, lime, black pepper, and mint do the sharp work. Salted pistachios add crunch so the bowl is not only soft fruit. Optional feta or paneer brings a salty contrast if you want it. The salad stays Jain-friendly for Paryushan and any allium-free week.

If you want a no-cook citrus pistachio salad that looks festive and feels light, this is the orange salad I want you to make.

Why This Orange Salad Skips Onion

Classic orange pistachio salads lean on shaved red onion or shallot for bite. We skip alliums. Fresh lime juice, a little orange zest, cracked black pepper, torn mint, and a light pinch of roasted cumin powder (bhuna jeera) or chaat masala give brightness without onion or garlic. I leave hing out here. It pulls the plate toward savory Indian salad territory, and I want the oranges to stay the star.

Kitchen test note: the first platter I made still had thick white pith on the slices and a heavy pour of dressing. The pith tasted bitter, and the pistachios went soft in the pooled oil. Now I trim the pith carefully, blot the slices if they weep, dress lightly, and add the pistachios only when we sit down to eat.

Why You’ll Love This Recipe

  • No cook, about 15 minutes: peel, slice, whisk, arrange
  • No onion, no garlic: a Jain orange salad that is easy to share
  • Sweet, salty, crunchy: citrus and pistachios in every bite
  • Festive color, everyday effort: works for weekend tables and quiet weeknights
  • Flexible: vegan as written without cheese; add feta or paneer if you want salty contrast
  • Nourishing crunch: pistachios add plant protein and healthy fats so the fruit plate feels more like a real side

Ingredients and Notes

Oranges: Navel oranges are reliable year-round. Cara Cara or blood oranges make a prettier mix when you can find them. Use 3 to 4 medium oranges for 4 side servings. Peel with a knife so you can strip the white pith. Slice into rounds about 1/4 inch thick, or cut into segments if you prefer less membrane. If a slice looks wet, blot it before dressing.

Pistachios: About 1/3 to 1/2 cup roasted salted pistachios, roughly chopped. Unsalted work too; season the dressing a touch more. Add them at the end so they stay crunchy. Raw pistachios are fine if you toast them in a dry pan for 2 to 3 minutes first.

Mint: Fresh mint is the cooling herb that keeps this orange pistachio mint salad from tasting like dessert fruit alone. Tear leaves. Basil is a fine Sicilian-leaning swap.

Dressing: 2 tablespoons extra-virgin olive oil, 1 to 2 tablespoons fresh lime juice (lemon works), 1/2 teaspoon orange zest, a pinch of salt, black pepper, and optional 1/4 teaspoon roasted cumin or a light dusting of chaat masala. Taste before you pour. You want it bright and lightly peppery, not sweet or oily. For more Jain citrus-forward dressings to keep on hand, see my lemon cumin dressing.

Optional cheese: 1/2 to 3/4 cup crumbled feta from a block in brine, or small paneer cubes. Scatter after the oranges are dressed so the pieces stay distinct. Paneer is milder, so season the dressing a little more boldly if you use it.

How to Make Orange Pistachio Salad

Serves 2 as a light plate | 4 as a side | Time: about 15 minutes

Step 1: Peel and slice the oranges

Trim a thin slice from the top and bottom of each orange so it sits flat. Cut away the peel and pith in strips, following the curve of the fruit. Slice into thin rounds (or segment). Arrange most of the oranges on a wide platter or in a shallow bowl. Blot any puddles with a clean towel.

Step 2: Prep herbs and pistachios

Tear the mint leaves. Roughly chop the pistachios. Keep the nuts aside until serving so they do not soften in the dressing.

Step 3: Whisk the dressing

In a small jar or bowl, whisk olive oil, lime juice, orange zest, a pinch of salt, black pepper, and optional roasted cumin or chaat masala. Taste. Adjust lime or pepper until it tastes sharp enough to stand in for the onion you are not using.

Step 4: Assemble and finish

Drizzle most of the dressing over the oranges. Scatter optional feta or paneer, then most of the mint. Fold once very gently, or leave the slices layered if you prefer a composed look. Just before serving, add the pistachios and the remaining mint. Taste. Add another squeeze of lime if the oranges were mild. Serve right away.

Ingredients

For the salad

  • 3-4 oranges medium navel, Cara Cara, and/or blood orange; peeled, pith trimmed, sliced into 1/4-inch rounds
  • 1/3 cup roasted salted pistachios roughly chopped; up to 1/2 cup; add just before serving
  • 1/4 cup fresh mint leaves torn; plus extra to garnish
  • 1/2 cup feta cheese optional; crumbled from a block in brine; up to 3/4 cup; or small paneer cubes

For the citrus-olive oil dressing

  • 2 tablespoons extra-virgin olive oil
  • 1-2 tablespoons lime juice fresh; lemon works
  • 1/2 teaspoon orange zest
  • salt pinch, to taste
  • black pepper freshly ground, to taste
  • 1/4 teaspoon roasted cumin powder optional; or a light dusting of chaat masala

Instructions

Peel and slice the oranges

  • Trim a thin slice from the top and bottom of each orange so it sits flat.
  • Cut away the peel and pith in strips, following the curve of the fruit.
  • Slice into thin rounds (or segment). Arrange most of the oranges on a wide platter or in a shallow bowl. Blot any puddles with a clean towel.

Prep herbs and pistachios

  • Tear the mint leaves. Roughly chop the pistachios.
  • Keep the nuts aside until serving so they do not soften in the dressing.

Whisk the dressing

  • In a small jar or bowl, whisk the olive oil, lime juice, orange zest, a pinch of salt, black pepper, and optional roasted cumin or chaat masala.
  • Taste; adjust lime or pepper until it tastes sharp enough to stand in for onion.

  • Fold once very gently, or leave the slices layered if you prefer a composed look.
  • Just before serving, add the pistachios and the remaining mint. Taste and add another squeeze of lime if the oranges were mild. Serve right away.

Notes

Trim white pith carefully; bitter pith and a heavy pour of dressing make the pistachios soft in pooled oil.
Blot weeping orange slices, dress lightly, and add pistachios only when you sit down to eat.
Paneer cubes work as a swap for feta; season the dressing a little more boldly because paneer is milder.
Store leftovers airtight in the fridge up to 1 day. Drain pooled juice and refresh with lime, mint, and a few new pistachios.

FAQs

Q1. Can I make an orange pistachio salad with no onion and still get enough flavor?

Yes. Use well-peeled oranges (pith trimmed), enough lime and zest, mint, black pepper, and a pinch of roasted cumin or chaat masala. Those replace the raw onion bite most recipes rely on. Salted pistachios help too.

Q2. What dressing goes with orange and pistachio?

A simple olive oil and lime (or lemon) dressing with orange zest is enough. Optional roasted cumin or chaat masala adds a gentle Indian-leaning edge. Skip garlic powder, onion powder, and hing. Honey is optional; I usually leave it out so the oranges stay bright, not candy-sweet. For a creamier Jain option on other salads, keep mint yogurt dressing on hand.

Q3. Can I make this ahead?

Peel and slice the oranges, chop the pistachios, and whisk the dressing up to a few hours ahead. Keep each component cold and separate. Dress and add pistachios (and cheese) only when you eat. Fully dressed leftovers soften and the nuts lose crunch.

Q4. Is this salad Jain / no onion no garlic?

Yes, as written: no onion, no garlic, no hing. Check store-bought spice blends, flavored pistachios, and vegan cheese labels if you use them, because some include allium powders.

Q5. Which oranges work best?

Seedless navels are the everyday choice. Cara Cara and blood oranges are excellent for color. Avoid underripe, very pithy fruit. Mandarins work in a pinch; segment them and blot well because they can release more juice.

Q6. What can I use instead of pistachios?

Toasted almonds, walnuts, or pumpkin seeds. Keep the same roughly chopped texture and add them at the end. If you need nut-free, roasted pumpkin seeds are the swap I reach for first.

Q7. How do I store leftovers?

Airtight container in the fridge for up to 1 day. Drain any pooled juice, refresh with lime, and add fresh mint and a few new pistachios if you have them. Texture is best the day you make it.

Closing

This orange pistachio salad is how I turn leftover citrus into something intentional: bright, crunchy, herby, and Jain-friendly without tasting like the onion was deleted and nothing replaced it. On heavy-lunch days it earns a spot next to dal-roti and quiet desk plates alike.

If you make it, tell me: do you keep it dairy-free with just mint and pistachios, or do you add the feta / paneer? Drop a comment below.
