1. Cook or cool the quinoa
If starting from dry, rinse 1 cup quinoa under cold water until the water runs clearer. Cook with 2 cups water until the grains look translucent and the little germ rings show, about 15 minutes. Rest covered 5 minutes, then fluff with a fork and spread on a plate to steam off. Leftover quinoa: break up clumps with wet fingers so the dressing coats every grain.
I once skipped the rinse on a rushed morning and the salad tasted faintly bitter even after a heavy lemon pour. Rinse the quinoa. It takes thirty seconds and saves the bowl.
2. Whisk the lemon cumin dressing
Shake oil, lemon juice, ground cumin, salt, and optional hing in a small jar until cloudy. Taste. You want lemon first, cumin right behind it. If you already keep a jar of lemon cumin dressing in the fridge, use about 1/3 to 1/2 cup and skip this step.

For pure meal prep, skip the tomato until the morning you eat. Cucumber and pepper stay happier over three days than tomato does.
