Ingredients
  

For the makhana

  • 4 cups makhana (fox nuts)
  • 1 tablespoon neutral oil avocado, sunflower, or peanut oil
  • 1/4 teaspoon salt

For the peri peri seasoning

  • 1 tablespoon neutral oil or melted ghee
  • 1 teaspoon smoked paprika
  • 1/2-1 teaspoon cayenne or red chili powder to taste
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dried oregano crushed between your fingers
  • 1/4 teaspoon amchur (dry mango powder) or 1/2 teaspoon lime zest
  • 1/4 teaspoon salt plus more to taste
  • pinch sugar optional, to round out the heat
  • 1/2 teaspoon fresh lime juice added off the heat

Instructions
 

Roast the makhana plain

  • Preheat the air fryer to 320°F (160°C) for 3 minutes. Toss the makhana in a bowl with 1 tablespoon oil and 1/4 teaspoon salt until lightly coated, not wet.
  • Air fry in 1 or 2 batches, without crowding the basket, for 8 to 10 minutes, shaking every 2 to 3 minutes, until the makhana sound hollow when tapped and taste crisp when cooled briefly. Tip onto a wide tray.

Make the peri peri coating

  • While the makhana roasts, stir together the smoked paprika, cayenne, garlic powder, onion powder, oregano, amchur or lime zest, salt, and sugar in a small bowl.
  • Warm 1 tablespoon oil or ghee in a small pan over low heat for 20 to 30 seconds, just enough to loosen it, then stir in the spice mix off the heat so nothing scorches.

Coat and finish

  • While the makhana is still warm from the air fryer, drizzle the peri peri oil mixture over it and toss with a wide spatula until every piece looks evenly coated.
  • Return the coated makhana to the air fryer basket for 1 to 2 minutes at 300°F (150°C) to set the spice coat. Watch closely, paprika burns fast.
  • Tip onto the tray again, sprinkle with the lime juice, and toss once more. Cool completely, 20 to 30 minutes, before transferring to an airtight jar.

Notes

Doneness cue: a fully cooled piece should shatter lightly, not bend. If it bends, it needs more time in the air fryer before you coat it.
Heat level: start with 1/2 teaspoon cayenne for a mild jar. My kids' portion stops there, mine gets the full teaspoon plus an extra pinch straight from the jar.
Mistake to avoid: don't toss raw makhana with the spice mix before roasting. The salt and citrus in the seasoning pull moisture and leave you with soft, chewy makhana instead of crisp.
Storage: airtight jar at cool room temperature for up to 2 weeks. If it softens from humidity, spread it on a tray and air fry 2 to 3 minutes at 300°F (150°C), then cool fully before re-jarring.
