Some weeks I open the fridge at noon and there is nothing lunch-ready, only a can of chickpeas and a cucumber that needs using. That is how this salad started: a pantry fix that became a weekly habit.

Chickpea salad, or chana salad as we call it at home, is my 15-minute Indian lunch when I want something high protein without turning on the stove. It is the chaat-cousin version: lemon, chaat masala, cumin, cilantro, and crunchy vegetables tossed with rinsed chickpeas. No Greek oregano, no feta, just bright desi seasoning that tastes like a light chana chaat without the heavy toppings.

In many Indian kitchens, chickpeas show up as chole, sundal, or street-style chaat. A simple chana salad sits somewhere in between: the protein of cooked chickpeas, the freshness of a kachumber-style chop, and the tang of lemon and chaat masala.

It is not the Mediterranean chickpea salad you see everywhere online. That version leans olive oil, herbs, and olives. This one leans citrus, spice, and cilantro. Both are excellent. This is the one I pack when I want lunch that still tastes like home.

You can use canned chickpeas or leftover boiled chana. Canned wins on busy days; homemade chana is a little firmer if you have it.

Tips for the Best Chickpea Salad

Test note: The first time I made this for meal prep, the bowl went watery by day two. Now I rinse the chickpeas until the foam is gone, pat them dry with a kitchen towel, and lightly salt and drain watery cucumbers if I am packing ahead. That one change fixed the soggy lunchbox problem.

  • Rinse and dry the chickpeas. Excess can liquid dulls the seasoning and waters down the lemon.
  • Taste the chaat masala. Brands vary in saltiness. Start with 1 teaspoon, toss, then add more.
  • Chop small and even. Bite-sized cubes mean every forkful gets chickpea, cucumber, and tomato together.
  • Add crunch at the end. Sev, roasted peanuts, or pomegranate arils right before serving keep texture bright.
  • Lemon last check. If it tastes flat, it usually needs more lemon or a pinch of salt, not more chaat masala.

Ingredients
  

For the salad

  • 2 cans chickpeas 15 oz / 425 g each, drained and rinsed
  • 1 English cucumber diced, about 2 cups
  • 2 medium tomatoes diced; seeds removed if very juicy
  • 1/2 small red onion finely chopped
  • 1 small green chili finely chopped; optional
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons roasted peanuts or pomegranate arils optional garnish

For the dressing

  • 3 tablespoons fresh lemon juice about 1 large lemon
  • 1 teaspoon chaat masala or to taste
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon black salt (kala namak) optional
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon neutral oil or olive oil optional, for a silkier toss

Instructions
 

Prep and toss

  • Drain both cans of chickpeas in a colander. Rinse under cold water until the foam disappears. Shake well, then pat dry with a clean towel.
  • Add chickpeas to a large mixing bowl. Dice cucumber and tomato into small cubes. Finely chop onion, green chili, and cilantro.
  • Add the chopped vegetables and cilantro to the chickpeas.
  • In a small bowl, whisk lemon juice, chaat masala, roasted cumin powder, black salt (if using), salt, pepper, and oil.
  • Pour the dressing over the salad. Toss gently until everything is coated. Taste and adjust lemon, salt, or chaat masala.
  • Rest 5 minutes if you can so the chickpeas pick up the seasoning. Garnish with peanuts or pomegranate, then serve.
